Instant Pot Smoked Turkey and Navy Bean Soup #MultiCookerMonday

Using an Instant Pot for bean soup has become my new favorite thing about this small kitchen appliance.  No soaking, no precooking and perfectly prepared, soft, creamy beans every. single. time!  This navy bean soup is paired with smoked turkey and was an amazing way to use up my Thanksgiving leftovers.  I might smoke some turkey legs just so I can make this soup again.

Turkey Frame Soup Continued.....

So this is where I left you yesterday.......

I also started my Turkey Frame Soup.  I threw the turkey frame, neck, skin, and scraps into my stockpot added an onion, parsley, a carrot and a stalk of celery.  Brought this to a boil and reduced the heat to low.  I will let it simmer while we have dinner and I make the Tiramisu and then it will go outside (It is in the 30's here) to cool off and be continued tomorrow.

This morning I brought in the stock.
And removed all the meat from the bones.

I ended up with quite a bit of meat from those scraps.

I strained the broth through a fine sieve lined with cheesecloth.
8 cups for the soup and the rest to use while cooking this week.

Chop 3 cups of vegetables of your choice.
Today I am using onions, carrots and celery because that is what I have on hand.
In the past, I have used broccoli or cauliflower, mushroom and parsnips.
Whatever vegetables you like and have on hand are fine.

You will need a can of diced tomatoes

And a couple of handfuls of noodles.

Place broth in a soup pot.
Add bouillon cubes, basil, tomatoes with their juice and vegetables.
Bring to boil and let cook for 15 minutes or until vegetables are tender.
Throw in a couple of handfuls of noodles and boil another 10 minutes.
Turn heat to low, add turkey and heat through.

Enjoy!

Turkey Frame Soup

1 meaty turkey frame, including any skin
1 onion,chunked
1 carrot, scrubbed and chunked (you can include greens if they are still on)
1 stalk celery, chunked, including leaves.
Handful of Parsley leaves if desired.
Salt and Pepper to taste.

Place all ingredients in a large stock pot and bring to a boil.  Reduce heat and simmer for 1 1/2 - 2 hrs.  Remove from heat, let cool and refrigerate over night.

2 bouillon cubes
2 t.  dried basil leaves
1/4 t. pepper
3 cups assorted vegetables, chopped
1 can diced tomatoes with their juice
1.5 c. uncooked egg noodles.

Remove all meat from bones and set aside.  Discard solids.  Strain broth through a sieve lined with cheesecloth.  You will need 8 cups for the soup.

Place Broth into a large soup pot.  Add all other ingredients except meat and noodles.  Bring to a boil and cook for 15 min.  Add noodles and cook for 10 min. longer.  Reduce heat, add reserved turkey and heat through.  Print Recipe

Turkey Pot Pie, Tiramisu and Turkey Frame Soup

Dinner tonight is Turkey Pot Pie. I make it exactly like Chicken Pot Pie but use Turkey (imagine that)LOL.

After dinner, I made Tiramisu to take to Amy's for dinner tomorrow.  Both Amy and Frank love Tiramisu and it is relatively easy to make.  I adapted my version from this recipe found on allrecipes.com.  You will find my version of this recipe below.

Place 6 egg yolks into a large saucepan.
Reserve the whites for another day.
We will have egg white vegetable omelets in the morning.
That should make up for Lasagna and Tiramisu for dinner LOL.

Add the sugar.

Whisk together.
Turn on heat to medium.

Add the milk and stir continuously until it comes to a boil.
Cook and Stir for one more minute.

It will become fluffy and turn into this beautiful golden yellow color.
Cool slightly and then refrigerate for 1 hour.

Whisk the Mascarpone into the cooled egg yolk mixture.

Whip together the cream and vanilla.

Place a layer of cookies on the bottom of the serving dish.
You may have to break them to make them fit.
Retain any pieces.

Mix together coffee and Kahlua

Pour half the coffee mixture over the cookies.

Add a layer of Mascarpone mixture.

A layer of Whipped Cream

Sprinkle with cocoa

Make a second series of layers, piecing cookies together as needed.
Refrigerate for at least 6 hours and up to 2 days before serving.

Tiramisu

6 egg yolks
3/4 c. sugar
2/3 c. milk
1 1/4 c. heavy cream
1/2 t. vanilla
1 carton Mascarpone cheese
1 c. coffee at room temperature
1/4 c. Kahlua
Soft Ladyfinger Cookies
2 t. unsweetened Cocoa

Whisk yolks and sugar in med. saucepan until well blended.  Whisk in milk and bring to a boil over medium heat, stirring constantly.  Allow to boil gently for one minute while continuing to whisk. Cool, cover and place in refrigerator for an hour.  Once cooled whisk the Mascarpone cheese in until smooth.

Beat the cream and vanilla in a large bowl with the whisk of a stand mixer until peaks form.

Mix the coffee and Kahlua into a shallow bowl. Dip the lady fingers in this mixture and then place into your serving piece.  I am using an 8x8 pyrex dish but I have doubled the recipe and used a 9x13
pan and I have also used a trifle bowl and placed the ladyfingers on the bottom and stood them up around the sides.

This is best made the day before but always chill for at least 6 hrs. before serving to allow the flavors to blend. Print Recipe

Turkey and Cranberry Pannini #FoodnFlix

Every year we have a rotation of Christmas Movies that we watch.  The main three are: my personal favorite, It's a Wonderful Life; Frank's favorite, White Christmas; and we both love the original Miracle on 34th Street.

There are other Holiday movies that we watch as well but these are the main three that are considered "must watch" in our household.

This past weekend we started with White Christmas.

Weekly Menu for the First Week of Advent

Happy Advent everyone.  It is a time of great anticipation as we ready the way for the Lord.  We start our preparations by decorating for Christmas. The first item to be displayed is the Advent Wreath. This comes out on the first day of Advent which is always the 4th Sunday before Christmas.

The remaining decorations follow shortly thereafter so that all is ready in time for the Christmas season. In this household, that season begins on December 6th with St. Nicholas Day and ends on January 6th with the Epiphany.

Frank is finishing up the cabinets on either side of the fireplace.   Stay tuned for those photos.  We hope to get both the inside and outside decorations complete before St. Nicholas Day but need to have it completed by next weekend when Santa arrives to have lunch with all the littles in the family.

Today, we have our annual Dive Shop Christmas gathering.  We all bring a dish to pass...I have been baking my heart out in the 12 Days of #ChristmasCookies event so that is what we will be bringing to the table.  Tingting is dropping Mel off with us after her gymnastics class.

Tomorrow morning we will be singing at Mass.  Tomorrow afternoon is slated for the outdoor decorations.

Monday during the day we will finish the outside and start the inside decorations.  Nicole and Pierre are having the Klik family over for a holiday dinner.  I was asked to bring Deviled Eggs and I am also bringing an appetizer to pass.

Tuesday we will continue the inside decorations before going to Amy and Doug's for our annual St. Nicholas Day celebration.  I will be posting more about this later in the week.  I am bringing a cookie platter, using some more of the cookies I am sharing all week long.

By Wednesday, our decorating should be complete and I can start concentrating on the upcoming parties that we are planning.   On Friday, we are having our first dinner party of the season.

So here is the Weekly Menu.  Please stop by each day as we post our updates on the house, decorations, recipes and photos.

Welcome Advent and Weekly Menu

Tomorrow marks the first day of Advent.  This is the latest that Advent can start.  We have less than 4 weeks until Christmas....where does the time go???

I put away all the Thanksgiving stuff and put out my Advent Wreath and a few winter decorations.  We will slowly start getting ready for Christmas, each day adding a little more.  The entire house will be decorated by December 15th when we celebrate Mom's birthday and Santa comes to visit all the great grandkids.

We will be using up a lot of Thanksgiving leftovers this week.

Sunday we are going to another "Toys for Tots" benefit and then Amy is having us over for dinner.  She is making Lasagna and I am bringing Tiramisu for dessert.

Monday I have a Parish Council Meeting. We are going to have Turkey Frame Soup so that we can all eat whenever we have time.

Tuesday I am going to Advent by Candlelight.  Frank and Mom will have Leftovers.

Friday we are taking John and Kirsten to Christmas Catechism and will have dinner beforehand.
