The Bread Bakers are going NUTS today............

BreadBakers
#BreadBakers is a group of bread-loving bakers who get together once a month to bake bread with a common ingredient or theme. Follow our Pinterest board right here. We also update the links each month on this home page.  We take turns hosting each month and choosing the theme/ingredient.

Kelly of Passion Kneaded is hosting this month and invited us to join her in sharing breads containing nuts in any form.  The possibilities are endless.   I considered muffins with a nut streusel topping, peanut butter bread, and a bread made with almond flour before I came across this recipe from Sally's Baking Addiction, which I knew I wanted to make.

Let's see what the others baked to share with us today.......

Cranberry Pecan Bread

I took this loaf of bread to our daughter's house for dinner.  She had our grandson two weeks ago today, so I have been taking dinner over for them every once in a while.  It gives me an excuse to get my baby snuggles in and gives them a much-needed break.

I packaged up the leftovers and left them for them to enjoy until my next visit.  On the drive home, Frank asked if the loaf was difficult to make.  I replied that it was not, and he said, "Good, will you make another loaf for us to have at home?"

Cranberry Pecan Loaf

It is delicious and savory.  Perfect for a bread basket.  It would make a lovely addition to your Thanksgiving dinner, and the leftovers are delicious toasted or stuffed with Brie Cheese and grilled.

Cranberry Pecan Boule

This lovely bread is chock full of Autumnal flavors. This no-knead yeasted bread is baked in a Dutch oven to help it hold its shape and is studded with dried cranberries and pecans.

Prep time: 5 MinCook time: 35 MinInactive time: 12 H & 30 MTotal time: 13 H & 10 M

Ingredients

  • 3 c. + 2 T. bread flour
  • 2 t. kosher salt
  • 1/2 t. Instant yeast
  • 3/4 c. chopped pecans
  • 3/4 c. dried cranberries
  • 1 T. honey
  • 1 1/2 c. warm water (95-100*)

Instructions

  1. Sift the flour, salt, and yeast together into a large bowl. Stir in the nuts and cranberries.
  2. Whisk together the water and honey. Pour in the flour mixture and stir with a silicone spatula until combined; it will be very sticky. Wet your hands and shape it into a ball. Cover tightly with plastic wrap and let rise until doubled in size, about 12 hours.
  3. Gently scrape the dough from the bowl onto a floured surface. Lightly flour your hands and shape the dough into a ball. Place the dough on a piece of parchment large enough to fit in a Dutch oven. Place the dough ball in a bowl on the parchment to help it hold its shape, then use a sharp knife or bread lame to score the bread. Cover with a clean kitchen towel and allow to rest for 30 minute.
  4. Meanwhile, place a covered Dutch oven into the oven and preheat it to 475*. Carefully remove the Dutch oven from the oven, remove the cover, and place the bread on the parchment inside. Cover, return to the oven, and bake for 25 minutes.
  5. Remove the lid and bake for another 5-10 minutes until the loaf is golden brown and sounds hollow when tapped.
  6. Carefully remove the bread and parchment from the Dutch oven and place onto a wire rack to cool.
