This bowl of soup is not only comforting it is healing. Chicken soup, well known for it's healing qualities when you're not feeling well, gets an added boost with a healthy dose of ginger and garlic as well as antioxidants from spinach.
I was inspired to make this delicious, nutritious soup while listening to the 15th book in the Chief Inspector Gamache Series by Louise Penny.
This novel finds Gamache demoted back down from the head of the Surete to head of the homicide unit after his decision, in Kingdom of the Blind, that allowed a new drug to be released into society. He is suffering mistrust from his superiors, confusion from his troops, and awful, scandalous attacks on social media.
Gamache handles all of this in his typical, stoic, manner not letting any of it interfere with his latest investigation as he tries to solve a murder during a disasterous flooding and state of emergency in his hometown of Three Pines.
Gamache and his team set up an incident room in the old train station and the local cafe delivers a Ginger Garlic Chicken Soup for lunch one day. While Gamache and his crew were not feeling ill they were definitely in need of comfort and this soup delivered.
I made this soup, adapted from one found at Food.com, yesterday with the intention of serving it as the soup course for dinner party I am hosting tomorrow.
There were only going to be 4 of us for dinner tomorrow and I made 8 servings of soup so when Little Miss M stopped by with her Mama and Papa to wish us Happy New Year and said she was hungry, I gave her a bowl. She enjoyed it.
Then my Angel Face and Rae emerged from their room where they had been watching a movie. They each had a bowl, and then they each had another. The Angel Face said it was "amazing" and "please give Mama this recipe".
So I won't be serving this soup to my guests on Friday but I do have another recipe I've been wanting to try so I will make that. I hope it is as good as this one.

Garlic Ginger Chicken Soup
This bowl of soup is not only comforting it is healing. Chicken soup, well known for it's healing qualities when you're not feeling well, gets an added boost with a healthy dose of ginger and garlic as well as antioxidants from spinach.

Ingredients
- 1 T. olive oil
- 2-3 cloves garlic, minced
- 1 1/2 T. ginger paste
- 1 Vidalia onion, cut into small dice (I used the food processor)
- dash of cayenne pepper
- salt and pepper, to taste
- 2 boneless, skinless chicken breast halves, cut into bite size pieces
- 1-2 carrots, shredded or one bag shredded carrots
- 32 oz. chicken broth
- 1 pkg. frozen chopped spinach
Instructions
- Heat the oil in a soup pot over medium-high heat. Add the onions, garlic, ginger, cayenne, salt, and pepper. Cook and stir until fragrant and onions are softened and translucent.
- Add the chicken and shredded carrot to the pot along with the chicken broth. Bring to a boil. Add the frozen spinach and bring to a second boil. Reduce heat and simmer for half an hour.
