I made chicken pot pie for dinner for My Marina and her family.  I knew Little Miss M would love it if I cut the crust into pumpkin shapes.

Serve up a warm, comforting dinner before sending your little goblins out begging this Halloween. This classic dish gets festive when you cut the pie crust into fun pumpkin shapes.

Prep time: 15 MinCook time: 50 MinTotal time: 1 H & 5 M

Ingredients

  • 1/4 c. butter
  • 1/4 c. flour
  • salt and pepper to taste
  • 2 c. chicken broth
  • 1/2 t. thyme
  • 2 c. cooked chicken, cut into bite-size pieces
  • 1 (15oz) package frozen mixed vegetables
  • 1 refrigerated pie crust

Instructions

  1. Melt butter in a saucepan over medium-low heat; add flour, salt, and pepper, then whisk and cook until the flour starts to brown slightly.
  2. Gradually stir in chicken broth and bring to a moderate boil. Add thyme, vegetables, and chicken to the gravy and mix well.
  3. Pour into a 9x13" baking pan. Roll out the pie crusts and, using a pumpkin or other Halloween cookie cutter, cut into shapes and place on top of the stew.
  4. Bake at 400 for 40-50 minutes or until the stew is bubbly and the crust shapes are golden brown.
