Chili Mac #SundayFunday

Easy and tasty, this one pot meal is sure to bring back fond childhood memories and become a new family favorite.

We had chili a lot while growing up.  It was a great way for my Mom to feed a ton of hungry people with inexpensive ingredients.  When there were more people at the table then chili, in would go the pasta to make it stretch even further.  So easy, simple and delicious.  




This is all made in one pot and makes a complete meal so clean up is a breeze as well.  My Mom was all about convenience.  Raising 6 children, working full time and maintaining a house kept her very busy as you might imagine.  She wisely took shortcuts as often as she could.

One Pot Chili Mac

One Pot Chili Mac

Easy and tasty, this one pot meal is sure to bring back fond childhood memories and become a new family favorite.

Ingredients

  • 1 lb. ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 c. beef broth
  • 1 can diced tomatoes with chilis
  • 1 (15 oz) can tri bean mixture
  • 1 sauzon goya seasoning packet
  • 1 t. cumin
  • salt and pepper, to taste
  • 1/2 lb macaroni noodles
  • Shredded Mexican blend cheese, if desired

Instructions

  1. Place a dutch oven over med high heat.  Add the ground beef, onions and garlic.  Cook, breaking up the beef,  until browned and crumbly and the onions are soft.  Drain any excess fat.
  2. Stir in the broth, tomatoes, beans, seasoning packet and cumin. Season with salt and pepper.  Bring to a boil, add the pasta. Reduce the heat, cover, and simmer for 15-20 minutes, 
  3. Serve with shredded cheese for topping, if desired.

  4. My mom made something very similar but we called it goulash! Another of my favorite childhood meals.

  5. I love chili mac! It definitely reminds me of childhood dishes - and I made it a lot in my early years of adulthood, I still make it probably a few times a year as a warm me up comfort food dish when the weather cools off!

  6. Mums definitely knew how to keep our tummy full on a small budget. We were a joint family and she had 15 mouths to feed! I spotted your summer veggie chili. Wouldn't mind using that recipe with pasta to make a veggie chili Mac.
