Easy Chicken Soup with Drop Dumplings
Ingredients
- 1/2 Vidalia Onion, diced
- 2 carrots, scraped and cut into uniform slices
- 1 stalk celery, diced
- Meat from one half of a Rostisserie chicken, skinned, diced or shredded
- 6 cups chicken stock
- salt and pepper to taste
- 1 c. flour
- 2 t. baking powder
- pinch of salt
- 1/2 c. milk
Instructions
- Place the onions, celery, carrots and broth into a large soup pot over high heat. Season with salt and pepper. Bring to a boil and cook until vegetables are tender.
- Meanwhile, mix together the flour, baking powder, salt and milk until completely moistened. Set aside.
- When vegetables are tender, reduce heat to a gentle boil and stir in the chicken.
- Drop the flour mixture by spoonfuls onto the soup, cover and cook for 10-15 minutes, turning the dumplings over in the soup after 5 or 6 minutes.
