Easy Chicken Soup with Drop Dumplings #FoodieExtravaganza

This easy peasy chicken noodle soup starts with packaged stock and a rotisserie chicken.  The dumplings are only 4 ingredients that mix together in seconds and turn an ordinary chicken soup into a hearty, delightful main dish.

I wasn't sure that I was going to be able to participate this month.  I was planning on making Vereniki and didn't get it done before the kitchen was dismantled.  

We still need to eat each day though and I have been using the side burner on my grill to do a lot of meals.  I decided to buy a rotisserie chicken and make some chicken soup.  Originally, I was going to add noodles but then, when the Vereniki didn't work out I decided to make some quick drop dumplings to add instead.

In less than half an hour, I had a delicious soup to feed to the hungry crew that is working so hard on my kitchen.

Easy Chicken Soup with Drop Dumplings

This easy peasy chicken noodle soup starts with packaged stock and a rotisserie chicken. The dumplings are only 4 ingredients that mix together in seconds and turn an ordinary chicken soup into a hearty, delightful main dish.

Ingredients

  • 1/2 Vidalia Onion, diced
  • 2 carrots, scraped and cut into uniform slices
  • 1 stalk celery, diced
  • Meat from one half of a Rostisserie chicken, skinned, diced or shredded
  • 6 cups chicken stock
  • salt and pepper to taste
  • 1 c. flour
  • 2 t. baking powder
  • pinch of salt
  • 1/2 c. milk

Instructions

  1. Place the onions, celery, carrots and broth into a large soup pot over high heat. Season with salt and pepper. Bring to a boil and cook until vegetables are tender.
  2. Meanwhile, mix together the flour, baking powder, salt and milk until completely moistened. Set aside.
  3. When vegetables are tender, reduce heat to a gentle boil and stir in the chicken.
  4. Drop the flour mixture by spoonfuls onto the soup, cover and cook for 10-15 minutes, turning the dumplings over in the soup after 5 or 6 minutes.
