Pumpkin and Pomegranate Molasses Cake pin

I bought this Jack O Lantern pan probably 10 years ago and try to use it at least once each season to justify the purchase.  If you aren't lucky enough to have a Jack O Lantern pan, a regular 9" cake pan will work.

Pumpkin and Pomegranate Molasses Cake

A simple cake flavored with Pumpkin, Fall Spices, and Pomegranate Molasses.

Prep time: 10 MinCook time: 35 MinTotal time: 45 Min

Ingredients

  • 3 c. cake flour
  • 1 T. pumpkin pie spice
  • 1 t. baking soda
  • 1 t. baking powder
  • pinch of kosher salt
  • 1 c. pomegranate molasses
  • 1 c. canned pure pumpkin
  • 3/4 c. buttermilk
  • 1/2 c. vegetable oil
  • 1 large egg
  • powdered sugar, if desired

Instructions

  1. Whisk together the flour, pumpkin pie spice, baking soda, baking powder and salt. Set aside.
  2. Whisk together the egg, molasses, pumpkin, oil, and buttermilk in a large bowl.
  3. Stir in the flour mixture just until combined.
  4. Pour into a 9" baking pan that has been treated with baking spray and bake in a preheated 350* oven for 30-35 minutes, until a skewer inserted removes cleanly.
  5. Let cool in pan for 10 minutes before turning onto a rack to cool completely.
  6. Place onto a cake plate. If using a Jack-o'-lantern cake pan, as I did, sprinkle with powdered sugar, if desired. If using a regular cake pan, make a Jack-o'-lantern template to place over the cake and sprinkle with powdered sugar, if desired.
