Welcoming Memorial Day Weekend and the Weekly Menu

This has been the strangest year.  We didn't get to gather for an Easter Celebration nor were we able to go to Mass.  Now it is Memorial Day weekend and our church is open for Mass but on a first come/first serve basis with only 100 people allowed and 6' between individuals that do not live in the same household.  Baby steps......I'll take it and hope that this is the way to keep this pandemic under control.

This Memorial Day I will also be remembering and honoring all of those on the front lines of this pandemic who have given their lives to help others.   May God bless and keep them and all of our fallen in the palm of his hand.

Lamb Stuffed Eggplant and a Perfect Wine from Galilee #WinePW

Mushroom Swiss Burger #BurgerMonth

This epic burger is part of a fantastic month-long event hosted by Girl Carnivore, but opinions are always my own!

If there is anything better than a ground beef patty cooked a perfect medium and topped with grilled onions, sauteed mushrooms and Swiss cheese I am not sure what it is.


I wait all winter long for the weather to break so I can put some burgers on the grill and celebrate Burger Month.........

Instant Pot Carrot Halwa inspired by The Henna Artist #MultiCookerMonday

Halwa translates to sweet or candy or dessert.  This Halwa made with a base of carrots is pudding like in consistency, candy sweet and beautifully spiced.  The nut and raisin garnish makes for a wonderful texture.  It looks lovely, smells amazing and tastes delicious....a feast for the senses.


I was inspired to make this dish after reading The Henna Artist by Alka Joshi.  I decided to make it in the Instant Pot for this month's Multi-Cooker Monday.

Please join me as we discover Sangiovese Wines around Italy #ItalianFWT

I am hosting our Italian Food Wine and Travel event this month that begins with this post, continues as we each choose a wine to taste (and pair in some cases) and finishes up with a twitter chat on June 6th at 11 AM Eastern Time.

I chose to look at the varietal of Sangiovese that is grown throughout Italy.  In the USA we identify our wines by the grape or grapes with which it is made.  In Italy the wine is identified by the area in which it is grown.

The most popular area of Italy that uses Sangiovese grapes is Chianti, in Tuscany.  Most of us, when we order up wine with our pizza go for that bottle of Chianti knowing that it is going to be a perfect pairing.

If you want to get a little fancier and a little more high end you might choose a Chianti Classico.  The Classico comes from a separate territory within Chianti and is the oldest and most prestigious wine.

Further south in Tuscany you will find the town of Montalcino.  The wine made here also uses 100% Sangiovese grapes and goes by the name Brunello di Montalcino for the higher end wines and Rosso di Montalcino for the wines that age less than a year.

There are several other areas of Tuscany where Sangiovese is bottled including Montecucco and Montepulciano.  Or you can leave Tuscany and go into Central Italy to Umbria or Lazio.  You can also find this grape growing in Valpolicella, Campania and Sicily.

A Casual COVID19 visit with Charcuterie and Chateau de Poncie Le Pre Roi Fleurie #Winophiles

The Winophiles are visiting the Crus of Beaujolais.  I always thought of Beaujolais as that fun, food friendly wine that needed to be enjoyed while it was young.  I didn't even realize that there was something other than Beaujolais Nouveau.



It turns out that I had a lot to learn and I and the other winophiles are anxious to share that knowledge with you.

Every few years we go down to the Florida Keys for a dive trip.  We always enjoy the diving regardless of which Key we visit.  I like exploring the different areas of the Keys but every trip.  Every. Single. Trip.  We always make a visit to The Fish House in Key Largo.


This is my attempt to recreate our favorite dish from this restaurant.  The fresh catch of the day served Matecumbe style.  Normally, if they have Snapper that is what I order.  I couldn't get any Snapper so I made mine with Mahi Mahi for this month's Fish Friday Foodies........

Tri Color Potato Salad #BBQWeek

This delicious salad begins with 3 varieties of potatoes tossed in wine while still warm and then dressed with Dijon vinaigrette.


Every BBQ needs Potato Salad and this version is perfect.  It is served at room temperature and is safe to leave out without refrigeration during those summer get togethers.

This Spanish style "pizza" or "flatbread" is quick and easy to make and the perfect Meatless Monday meal.


Yeast dough risen and shaped into a gorgeous oval, painted with olive oil and then topped with thinly sliced vegetables and baked to a golden brown.  Drizzle with a little olive oil and serve as an appetizer, snack or light lunch.

Leftover Filet of Beef Stroganoff and the Weekly Menu

I don't have much to say.  We are still under quarantine. We had a nice week last week visiting with our kids on the deck while social distancing.  Not being able to get and give hugs sucks.  That is all.

I made filet mignon for our anniversary dinner.  Normally I use 6 oz filets, these were closer to 10 oz. so I had leftovers.  I decided to turn them into Stroganoff and serve them over egg noodles.  They replaced the gyros that were on the menu for last week as I couldn't find any ground lamb.


Leftover filet mignon sliced and quickly reheated in a creamy mushroom stroganoff sauce before being ladled onto egg noodles for a delicious and hearty meal.

Pickled Pork Tongue #InternationalPickleWeek

Nose to Tail eating became very popular a couple of years ago but it actually stems way back to ancient times when you had to work hard and hunt for your food and clothing so you let nothing go to waste.  In honor of that movement and International Pickle Week, I am sharing this recipe with you today.

Lobster, Mango and Avocado Salad; How to celebrate in Don Tillman Style

We celebrated our 28th Anniversary on Saturday.  This was a very different celebration than which we normally have.  Sometimes we go out for dinner, but that was not an option this year.  That's okay, we often have dinner at home but this is the first Anniversary dinner we have had at home since we adopted the Teen.


We still broke out the china, lit candles, opened a nice wine and created a wonderful dinner.  We still toasted to our amazing life together and wished for many more years to come.  And then, after dinner, we broke out the Yahtzee game and the Teen kicked our butts........

Copycat Buddy's Antipasto Salad #OurFamilyTable

Buddy's Pizza started in Detroit in 1946 and now has 11 restaurants in Michigan.  Food Network recognized it as one of the five best pizzarias in the USA.  I agree.  We love Buddy's Pizza but what we love even more than their pizza is their Antipasto Salad.


Fresh romaine, tomatoes and cucumbers tossed in a red wine vinaigrette and then topped with salami, ham and cheese.  This salad can be a delicious starter or a hearty main course depending only on serving size.

We are visiting Campania today with our Italian Food Wine and Travel group.  I was not familiar at all with this are so I went to my trusty Wine.com site and asked the agent there for some suggestions.
One of his suggestions was this red wine blend from Terredora di Paolo.


I decided to buy this bottle and while waiting for it to arrive started looking at the foods of Campania.
