The leaves are changing, the weather is crisp, and the smell of burning leaves and bonfires fills the air. Fall is here. It's time to put away the grill, pull out the slow cooker, and serve up this delicious Pork Loin with Cranberry Gastrique.
This is a wonderful alternative to Turkey on Thanksgiving. It is a great recipe for feeding a crowd. There were only three of us, so I had a lot of leftovers. This makes me happy because I can add planned leftovers, like Pulled Pork Sandwiches and a Pork Noodle Casserole, to my Weekly Menu.
Whether you are feeding a crowd or just a few, put this roast in the crockpot and feel free to rake those leaves, go for a walk, build a fire to read by, or head to the cidermill, knowing dinner will be ready when you get home.

Slow Cooker Pork Loin Roast with Cranberry Gastrique
Boneless Pork Loin Roast lightly seasoned and cooked to fall-apart tenderness. Served with an easy Cranberry Gastrique.
Prep time: 10 MinCook time: 6 HourTotal time: 6 H & 10 M
Ingredients
- 1 boneless pork loin roast, about 3-4 lbs.
- salt and pepper, to taste
- 1 t. garlic powder
- 1 onion, thickly sliced
- 1 1/2 c. apple cider or chicken broth
- 4 oz. fresh cranberries
- 3/4 c. sugar
- 1 c. red wine vinegar
- 1/2 t. dried thyme
Instructions
- Place the onions in the bottom of your crockpot or slow cooker. Season the pork roast with salt, pepper, and garlic powder. Place the roast on top of the onions and pour the liquid around the roast. Cook on low for 6-8 hours or on high for 4-5 hrs.
- Remove from the slow cooker, cover with foil, and let rest while you make the gastrique.
- Place the cranberries, sugar, vinegar, and thyme in a small saucepan over medium heat. Season with salt and pepper. Cook, stirring occasionally, until the cranberries burst and are softened, creating a thick, syrupy sauce.
- Slice the roast and place onto a platter, drizzle with some of the sauce and serve with remaining sauce for people to add as they wish.
