Summer Chicken Stew #FarmersMarketWeek

I call this Summer Chicken Stew, not only because it is chock-full of the flavors of the season, but also because it is cooked using a slow cooker, perfect for hot summer days when you don't want to heat up the house.

Beans on Toast is Not a Disaster and the Weekly Menu

This dish is traditional comfort food in the UK.  I have read about it many times, but have never tried it.  I must say, it's pretty tasty and yes, comforting.  A great way to use up leftover baked beans if you have them.  If not, open up and heat some canned beans to serve over the toast.

I was inspired to make this dish while listening to the novel Jenny James is Not a Disaster.......

Honduran Baleadas #EattheWorld

Baleadas is a traditional Honduran food consisting of thick flour tortillas smeared with refried beans, sprinkled with queso, then topped with avocado and a drizzle of sour cream.  It is folded and eaten by hand, making it a wonderful street food.

This is a simple, delicious salad. A perfect side dish for the cold winter months when fresh produce is not at it's peak.  On the off-chance there are leftovers you can add a can of tuna and enjoy it for lunch the following day.

Hoppin' John and a Book Review

I had the Blue Plate Special, An Autobiography by Kate Christensen on my bookshelf for quite a few years now.  I'm not positive but I think I got it from my friend Cam of Culinary Adventures with Camilla.

Huevos Rancheros Verde #SundayFunday

Huevos Rancheros translates to Ranch Style Eggs.  This is a breakfast commonly served to ranch hands in Mexico to help them power through busy, active days.  I am sharing a lightened up version that is just as delicious but better suited for a less busy lifestyle and career.

Enfrijoladas de Pollo #SundayFunday

Happy Halloween!!!

Have you ever tried Enfrijoladas?  In Mexico, when they have leftover frijoles (beans) and stale corn tortillas they turn them into Enfrijoladas.  They are quick easy and versatile.  You can top them with fried eggs or fill them with other leftovers.  Or you can simply sprinkle them with cheese and dig in. In this case I filled them with leftover chicken.

I love the "cook once, eat twice" idea of Menu Planning.  In this meal I use leftover roast pork and gravy combined with Mexican beer and spices to make a quick and delicious meal.
