The Snug and The Weekly Menu

Last night Frank was up north hunting and I didn't feel like cooking just for me and Mom so I threw together some Chicken Rice Soup using leftovers from the week and we had that instead.  So the Honey Soy Broiled Salmon is being moved forward for the second week in a row.



Chicken Rice Soup

6 c. Chicken Broth
1.5 c. cooked rice
1 c. cooked chicken cut into bite size pieces
1 c. frozen mixed vegetables
salt and pepper to taste

Place all items into a saucepan and heat through. Print Recipe

Tonight we are going out with friends and Amy is coming to take Mom out for dinner and to spend the evening with her.

We are meeting with the Bendas for dinner at one of my favorite local restaurants, The Marine City Fish Company.  This is a small restaurant and the food is wonderful.  I especially enjoy their smoked salmon spread and their chowder is to die for.  After dinner we are going to a guitar concert at The Snug which is a new performing arts theatre they have opened in Marine City.  It is my first time going so I am excited to see what it is like.

Monday I have to work a World Heritage exhibit at a high school during the evening so I will make up some soup and Frank will make some grilled cheese sandwiches to go with it for him and Mom.

Nothing else on the schedule for the week so a full weekly menu is below.

  1. Sounds like a good week of eating. I need to get to work on my menu for the week. I have slacked off a bit. It sure helps to know what you are going to fix each day and have all ingredients on hand, doesn't it. I like to do mine for a month at a time but I am changing it to weekly cause I think I will link up with Menu Plan Mondays....

    1. Yes, if I don't have a menu planned more often than not we end up eating out or having carry out because I didn't pull anything out of the freezer. It will be nice to see you at MPM.
