Weekly Menu

Today we have a cocktail party to attend at which we are to learn more about the African Safari that Frank bid on and won last year....Long story, you can read about it here.  Appetizers will be served and I am bringing a Cheesy Bean Dip to pass.  This recipe is from my newest Cuisine at Home Magazine, Exclusive Member Edition.


Tuesday we are going out to dinner and a movie with Kim and Kurt.  We haven't chosen the movie yet...any recommendations out there??


Wednesday we are attending a Potluck dinner at an area church to promote an ecumenical support group.


Thursday we leave for Virginia to see Chuck.  Cannot wait to get my arms around him and as a super bonus our Amy girl is going with us!!!


So it's not much of a menu this week but I am happy to share it with you.  Come back each day for photos and recipes.



Cheesy Bean Dip
adapted from Cuisine at Home, Exclusive Member Edition
 
1 can pinto beans
1 can refried beans
3 T. pickled jalapenos, diced (optional)
1/2 c. salsa
1/2 cup Mexican blend cheese
 
Combine all ingredients in a saucepan and heat until cheese is melted.
Place into an 8x8 casserole that has been sprayed with cooking spray.
Sprinkle another 1/2 cup of cheese over the bean mixture.
Bake in a 400* oven until cheese is bubbly and starting to brown.
Garnish with green onions and/or cilantro and/or additional pickled jalapenos

Virginia...sure hope it is sunny and warmer there.
