Pizza Casserole for Remarkably Bright Creatures and the Weekly Menu

 
Back in 2023, I read the novel Remarkably Bright Creatures.  I enjoyed the novel so much that I suggested it for our Lit Happens Book Club and was inspired to make a Chicken with Mushrooms recipe that I shared along with my Book Review.

Irish Minestrone Soup #MoviesandMunchies

Unlike Italian Minestrone, Irish Minestrone contains no beans and includes bacon.  It is perfect as a starter, a delicious lunch, or a hearty dinner when served with some soda bread and a salad.

Pesto alla Trapanese #MoviesandMunchies

This pesto, originating in Sicily, certainly does not get the attention it deserves.  The Sicilian version of pesto has a fresh tomato base, is full of herbs, and uses almonds instead of pine nuts. It is delicious!!!

Celebrating the 2nd Day of Christmas with a Warm Cocktail and the Weekly Menu leading up to the New Year #MoviesandMunchies

This warm, spiced cocktail is a classic Holiday drink that dates back to the Colonial days.  There are many different versions of this cocktail but all contain rum, butter, and spices.

The type of rum can vary but I prefer using spiced rum.  Some recipes use hot water, as mine does, others use hot cider.
