Coconut Crusted Chicken #SundayFunday

 Tender strips of chicken, dredged in coconut flour, egg, and a panko/coconut flour mixture, then pan-fried in coconut oil and finished in the oven.

I made a fruity sauce for the chicken using some of my son's homemade Blueberry/Ginger Jam mixed with Orange Honey and Dijon Mustard.  It was the perfect accompaniment.

Coconut Crusted Chicken

Coconut Crusted Chicken

Tender strips of chicken, dredged in coconut flour, egg, and a panko/coconut flour mixture, then pan-fried in coconut oil and finished in the oven.

Ingredients

  • 2 lbs, skinless, boneless chicken breasts
  • 1 1/2 c. coconut flour, divided
  • salt and pepper, to taste
  • 2 eggs
  • 1 c. panko breadcrumbs
  • 1/4 c. coconut oil

Instructions

  1. Pound the breasts into even thickness and cut into strips. Set aside.
  2. Season 1 cup of the coconut flour with salt and pepper. Place into a shallow bowl.
  3. Whisk the eggs in a shallow bowl; place next to the seasoned coconut flour.
  4. Combine the breadcrumbs and remaining coconut flour in a third shallow bowl and set next to the eggs. This is your breading station.
  5. Dredge the chicken strips in the seasoned flour, then in the egg wash, and finally in the breadcrumb mixture. Place onto a plate.
  6. Heat the coconut oil in a large skillet over medium-high heat and cook the chicken in batches until browned and crispy, transferring the browned pieces to the rack of an air fryer preheated to 400*.
  7. When all the chicken is browned, place in the air fryer and cook for 8-10 minutes until an internal temperature of 165* is reached.
  8. Remove to a platter and serve with your favorite dipping sauce.
