Marinated Bean Salad, A Movie Review, and The Weekly Menu including Easter

This quick and easy salad, inspired by the Netflix Original Movie The Life List, goes together in a flash, starting with purchased marinated bean salad.

Marinated Bean Salad

I was flipping through the TV channels earlier this month and saw the trailer for this film on Netflix.  I decided to watch it.  I enjoyed it so much that I watched it again the next day with my Foodie Glasses on to see if it was a good choice for our Movies and Munchies blogging group.

There was not a ton of food in the movie, but certainly enough for inspiration so I invited the others to watch it this month.  I will be back at the end of the month to share the recipes that this movie inspired them to make, but today I am sharing this bean salad I made.

This Bean Salad was inspired by a scene at the very beginning of the movie.  Alex is late arriving to her sister-in-law's baby shower and her mother and siblings are discussing that she is on the way and bringing her Bean Salad.  The mother whispers...."there is never a good time for that bean salad".

I don't know what was in Alex's bean salad but I find it hard to believe that she could ruin it LOL.  I love bean salads.  I have shared Corn and Black Bean Salad, Ligurian Seafood Salad, White Bean and Basil Salad, Green Bean Salad, and a Four Bean Salad, to name just a few.

Jarred Bean Salad

I also always have jars of Marinated Bean Salad in my pantry.  It makes a perfect side dish for those impromptu gatherings that often happen in this household.  It is also a great addition to greens, as in the recipe I am sharing with you today.

I don't think my bean salads are received by my family and friends with dread as Alex's was, but I am happy that my family and friends love and support me as much as Alex's do.

Alexandra Rose (Sofia Carson) is a young woman who seems to have given up on all her dreams and aspirations and is settling for what she believes life has to offer.  Her mother (Connie Britton) is dying, and her final wish is to help her daughter be the very best version of herself.

She finds a life list that Alex had written at age 13 and decides to give her one year to complete the goals and dreams that it contained.  With a lot of support from family and friends and a few bumps along the way, Alex rediscovers the person she once was and is meant to be.

I recommend this movie.  I also recommend you have a box of tissues nearby as you watch.  It is tender, touching, and poignant.  I may watch it a third time before the round-up.

Today is Good Friday.  A good day to reflect on the love and support that we Christians receive from our Savior who died so that we are free to find ourselves and the meaning of our lives.

Tomorrow night, we will attend the Easter Vigil service.  Sunday, we will celebrate Easter with a gathering of family and friends, starting with an Easter Egg Hunt for the kids and finishing with dinner.

We will be enjoying leftovers for the rest of the week, reflected in my weekly menu below.  We are attending a Wine Tasting Dinner with the Bonacorsis and Luths on Wednesday Evening.   I have jury duty starting Tuesday, so leftovers are very convenient.

Marinated Bean Salad

Marinated Bean Salad

Fresh, crisp romaine, sliced cucumbers, sweet cherry tomatoes, and jarred marinated 4-bean salad dressed with the marinade from the beans create a simple and beautiful salad. Eat a rainbow!!

Ingredients

  • 1 head romaine lettuce, chopped
  • 1/2 of an English cucumber, sliced
  • 1/2 pint cherry tomatoes, halved
  • 1 c. prepared marinated 4-bean salad
  • 1/4 c. marinade from bean salad

Instructions

  1. Place the chopped lettuce onto a platter. Surround with the sliced cucumbers and tomatoes.
  2. Layer the bean salad over the center of the romaine. Drizzle with the marinade and serve.

  1. I love a good bean salad, too, and I thought the same thing---how could Alex ruin it. Good choice and beautiful dish (jarred or not). Good review of the movie too. She definitely was just settling until she was jump started by tragedy (and love).
