Copycat Panera Thai Chicken Salad #SundayFunday

 I think that of all the fast-food options available, the one we enjoy most often is Panera.  I feel that they offer more nutritious food that is not only quick but also colorful, healthy, and delicious.  This Thai Chicken Salad was one of my favorites, but the last time I visited, it was no longer on the menu.

Pesto alla Trapanese #MoviesandMunchies

This pesto, originating in Sicily, certainly does not get the attention it deserves.  The Sicilian version of pesto has a fresh tomato base, is full of herbs, and uses almonds instead of pine nuts. It is delicious!!!

Almond Poppyseed Bread #BreadBakers

This month's Bread Bakers is being hosted by Mayuri of Mayuri's Jikoni.  Mayuri asked us to make a bread containing seeds.  She then shared that botanically seeds include cereals, legumes, nuts, cocoa beans and coffee beans.  Who knew?  Mayuri....that's who.


I decided to share a quick bread that contained Poppy Seeds.  It also contains almond extract so I guess that means it double qualifies if nuts are considered seeds.

I like this recipe because it only makes one loaf.  I know, I know....quick bread freezes beautifully so it shouldn't matter if I make more than one loaf.  That is assuming that I have any will power, which I don't.  It is safer for me just to make one loaf of something this delicious.  Then I am not tempted to keep eating until there is nothing left but the crumbs.

This bread certainly didn't last long.  I served it up with coffee on the first day that the carpenter came to work on our remodel.  He had 2 pieces with his coffee in the morning and then another piece after lunch. I think he liked it.

Almond Poppyseed Bread

This quick and easy sweet bread has a tender crumb and an amazing flavor profile. It is perfect with your morning cup of coffee or as a dessert after lunch or dinner.
prep time: 15 MINScook time: 1 hourtotal time: 1 hours and 15 mins

ingredients:

1 c. + 2 T. sugar
1/2 c. vegetable oil
2 eggs
1 1/2 T. poppy seeds
1 t. lemon juice
1 t. almond extract
1 t. vanilla
1 1/2 c. flour
3/4 t. baking powder
pinch of salt
3/4 c. milk

instructions

Place the sugar, oil, eggs, poppy seeds, lemon, almond extract and vanilla into the large bowl of stand mixer, fitted with the paddle attachment.  Beat until well blended.

Combine the flour, baking powder and salt.  With the mixer on low, alternately add the flour mixture and the milk to the sugar mixture, beating  just until completely moistened.

Pour into a 8x4" loaf pan that has been treated with baking spray.  

Bake in a preheated 350* oven for 50-60 minutes, until a skewer inserted removes cleanly.

Tent with aluminum foil if the bread starts to brown too much.
