The Angel Face hung out with me all last week while she was attending theater camp. Her play was yesterday. She played Grandpa Joe in Willy Wonka and did a great job.
Friday afternoon, after dress rehearsal, Little Miss M came over to hang out with the Angel Face in the pool. When it came time for dinner, I went in and threw together this quick and easy Mac and Cheese, adding some chicken for extra protein. I served it with salads from the refrigerator, and dinner was ready in less than half an hour.

Instant Pot Chicken Mac and Cheese
This Chicken Mac and Cheese is made in an Instant Pot. Ready in less time than it would take to bring the cooking water to a boil to prepare the noodles, with no need to turn on the oven on these hot summer days.
Prep time: 15 MinCook time: 5 MinTotal time: 20 Min
Ingredients
- 1/2 Vidalia onion, diced
- 3-4 cloves garlic, minced
- 2 t. vegetable oil
- 2 lbs boneless, skinless chicken breasts, diced
- 1 lb short pasta; I used a mixture of elbow and cavatelli
- salt and pepper, to taste
- 4 c. chicken broth
- 2 T. butter
- 1/3 c. light cream
- 2 c. shredded cheese blend; I used a Mexican blend
Instructions
- Turn the Instant Pot on to the sauté setting. When hot, add the oil, onions, and garlic. Cook for about 30 seconds until fragrant. Add the chicken, season with salt and pepper, and cook, stirring occasionally, until the chicken is no longer pink.
- Cancel the saute setting. Stir in the pasta, broth, and butter. Seal the Instant Pot and set manually for high pressure for 5 minutes. When cooking time is finished, quick-release the pressure and carefully open the pot.
- Stir in the cream and cheese, adding more cream if needed.
- Transfer to a serving dish and serve.
