What to do when the theme for your Sunday Funday Blogging group is Cakes around the World, and temps are at record highs while air quality is at record lows?  You make an Icebox cake from Mexico that is quick, easy, delicious, and requires absolutely no baking!!

Carlota de Limon

It's time for Sunday Funday, and we need a reason to have some fun after being stuck inside for the past few days while our poor Canadian neighbors are devastated by the wildfires consuming their land.

Feliz Cinco de Mayo and a Book Review

We combined my husband, Frank's, 75th birthday on Saturday with Cinco de Mayo for a wonderful Fiesta.  We had about 30 guests, and I wanted to keep things simple.  Life doesn't get much easier than a sheet pan Shrimp Fajita platter.

Easy Enchiladas #SundayFunday

This easy enchilada recipe has been a staple in our household for many years.  It is not a true enchilada recipe as it uses flour tortillas instead of traditional corn tortillas, but it is easy to make,  delicious to eat, and can be made ahead of time.

Repurposing Meatloaf Two Ways

Last Saturday, my brother, Dick, joined us for dinner.  We had Mass before he was scheduled to arrive so I decided to make Crockpot Meatloaf so it would be ready when we got home.  I made a batch and a half because Rae had said she would make Meatloaf Sandwiches for dinner on Sunday.

Meatloaf Sandwich

As a kid, Mom sometimes packed me leftover meatloaf sandwiches for lunch.  Cold meatloaf on soft bread with ketchup.  I loved it but had never made it myself.  Rae's Meatloaf Sandwich was nothing like that!!!

Chicken Tinga Tacos #SundayFunday

Tinga is a smoky sauce made of tomatoes, onions, and chipotle peppers.  These tacos are made with chicken baked in this sauce, then shredded and placed into a corn tortilla before being topped with Mexican cheese.

3 Ingredient Slow Cooker Salsa Chicken and The Weekly Menu

This easy slow cooker recipe is great when feeding a crowd.  Only 3 ingredients and a few minutes of hands on time results in tender, flavorful chicken that can be served with tortillas and toppings, a side of rice or used in a casserole.

Salsa Chicken

I served it up at the Teen's birthday party as one of the entrees with warmed flour tortillas, cheese, sour cream and guacamole so people could roll their own burritos.  There were 2 other entrees as well which meant that after feeding nearly 30 people there was still enough left to create a casserole for another  dinner for 4.

Huevos Rancheros Verde #SundayFunday

Huevos Rancheros translates to Ranch Style Eggs.  This is a breakfast commonly served to ranch hands in Mexico to help them power through busy, active days.  I am sharing a lightened up version that is just as delicious but better suited for a less busy lifestyle and career.

Enfrijoladas de Pollo #SundayFunday

Happy Halloween!!!

Have you ever tried Enfrijoladas?  In Mexico, when they have leftover frijoles (beans) and stale corn tortillas they turn them into Enfrijoladas.  They are quick easy and versatile.  You can top them with fried eggs or fill them with other leftovers.  Or you can simply sprinkle them with cheese and dig in. In this case I filled them with leftover chicken.
