Sourdough Corn Fritters #SundayFunday

These fritters, made with sourdough batter filled with fresh corn, minced jalapeno, a little scallion, and a bit of red bell pepper, are a delicious, seasonal treat, especially when drizzled with a little hot honey.

It is the end of sweet corn season here in Michigan.  You will want to hurry and make these delicious fritters before it is all gone.  I drizzled mine with Hot Honey before serving.  We couldn't get enough of them.

Sourdough Corn Fritters

Sourdough Corn Fritters

Hurry and make these while fresh sweet corn is available. Missed your window? Frozen or canned corn will work as well.

Prep time: 5 MinCook time: 12 MinTotal time: 17 Min

Ingredients

  • 1/2 c. flour
  • 1/4 t. baking soda
  • pinch of salt
  • 1/4 c. powdered dry milk
  • 1 egg
  • 1/2 c. sourdough starter, room temperature
  • Kernels from 1 ear of corn
  • 1 scallion, minced
  • Vegetable oil for frying
  • Hot Honey for serving, if desired

Instructions

  1. Whisk together the flour, baking soda, and salt.
  2. Whisk the eggs with the sourdough starter. Stir in the corn and scallions. Add the flour mixture and mix just until combined.
  3. Drop batter, by Tablespoon, into hot (375*) oil and fry for a couple of minutes per side, turning once, until golden brown. Drain on a paper towel-lined plate and keep warm until all fritters are cooked.
  4. Drizzle with hot honey and serve immediately.
