Butternut Squash Pizzettas #FootballFoods

I am pleased to be hosting a game day party today.  I must admit that we are not huge football fans in this household.  That not withstanding, I love hosting game day parties.  At our house the game is on in the background and the main focus is on the food, drink and the card games or board games that we enjoy while glancing at the screen every once in a while.

Being as it is the start of a New Year and many of us resolve to try to eat more healthily, I was thrilled to open up a flyer from my local grocer and find this recipe for Butternut Squash Pizzettas.


While these taste absolutely nothing like pizza, they are adorable and crazily delicious.  They are a great finger food and make a great addition to the often calorie laden fare normally found at game day parties.


Include these at your next gathering and watch the pleasure on your guests faces when they realize they can enjoy something other than the carrot and celery sticks on the snack table.


I made these in two steps, roasting the butternut squash earlier in the day and then topping the rounds and putting them in the oven shortly before my guests were to arrive.

Butternut Squash Pizzettas
adapted from Kroger

2 T. pine nuts, toasted
1 butternut squash
2 T. pesto, homemade or purchased
2 T. grated parmesan cheese

Cut the stem and bulb from a butternut squash.  Discard the stem and reserve the bulb to be peeled, seeded and used in another application.

Peel the neck and slice into 1/4" rounds. Place onto a baking sheet that has been lined with a silicone mat or parchment paper.  Bake in a preheated 400* oven for 15 minutes, flip rounds over and bake for another 15-20 minutes, until tender.

Remove from oven.  Top each round with pesto and then sprinkle with cheese.  Divide the pine nuts between the rounds and return to the oven for about 5 minutes, until cheese is melted and bubbly.

Let cool a few minutes before serving warm or at room temperature.  Print Recipe

Cornflake Chicken Strips

Many of you are aware that we enjoy having our granddaughter each week from Tuesday morning until Wednesday evening when her Mama gets off work.


This means that each week we dedicate these 2 days to her.  Our household becomes a toddler house.  We play toddler games. We watch toddler movies and shows.  We go to the zoo, the park, the bounce house and the library for story time.  We build forts and castles with blankets, chairs and tables.  And we eat toddler friendly meals.


Luckily, she is a very good eater and will eat almost anything.  She will try new foods and normally finds that she likes them.  Our rule is that she needs to at least try it and if she doesn't like it she is allowed to spit it into her napkin.  Normally she smiles and say "mmmmmm".

She does have her favorites though so we tend to rotate the same menus for Tuesday nights.  Spaghetti with Meat SauceChicken Noodle SoupPepperoni pizza and Coconut Chicken Strips.

But I also serve up other types of chicken strips or nuggets according to what I have available in my pantry.  I use flavored bread crumbs or tempura batter or, in this case, cornflakes.


Served up with fresh veggies and ranch dressing, it made the perfect lunch for a busy toddler and was enjoyed by Grammy and Grampy too.


As you can see, she happily consumed all of her lunch and then was ready for naptime.  Phew.......naptime is a lifesaver...it gives us a chance to rest up and regroup so that the fun can continue in the afternoon.


These tasty strips are not only perfect for Toddler Tuesdays but would also be a welcome snack on game day.

Cornflake Chicken Strips

2 boneless, skinless chicken halves cut into strips
1/2 c. flour
salt and pepper, to taste
2 eggs, beaten
3 c. cornflake crumbs

Combine flour with salt and pepper and place in a shallow dish.  Place beaten eggs in another shallow dish next to the flour and a third shallow dish next to the eggs filled with cornflakes to create a dredging station.  

Place the chicken strips before the flour and a parchment or silicone lined baking sheet after the cornflakes.  

Take each piece of chicken and dredge it in the seasoned flour.  Dip the floured chicken into to egg, covering completely.  Dredge the egg covered chicken in the cornflakes and place onto the baking sheet.  Continue until all pieces are coated.

Bake in a preheated 400* oven for 15-20 minutes, until golden brown and an internal temperature of 165*.  Print Recipe

Jalapeno Poppers for #SundaySupper

It's September folks...you know what that means....Football season!!!  Now, I must confess that I am not a huge football fan.  I am, however, a huge party fan and football season means game day parties, tailgates, and gathering with friends and family.  Now, THAT, I can get into.  I don't even mind having the game on in the background.

In honor of the season, the folks over at Sunday Supper suggested that we share our favorite finger foods for our readers.


Tingting's friend, Charlie, came over for dinner the other night.  He mentioned that he had been having a hankering for jalapeno poppers all day.  


As luck would have it, I had gone to the Farmer's Market that morning and had bought a pile of jalapeno peppers.  I didn't know what I was going to make with them but I couldn't pass them up. They were gorgeous.


I also happened to have cream cheese, cheddar cheese and some bacon.  So, while they played in the pool with my Little Angel Face, I quickly put together these poppers for them to snack on before dinner.


They were very surprised when I brought the poppers out to the pool.  They were gone in a flash, I think Frank had one,  Ting had one or two and Charlie scarfed down the rest exclaiming how good they were and that he couldn't believe that I made him poppers.  Score a touchdown for the girl's mom!!

Baked Jalapeno Poppers

6 Jalapeno Peppers
2 oz. cream cheese, softened
1/4 c. shredded white cheddar cheese
6 strips bacon

Cut peppers, including stem, in half and remove all membrane and seeds.  Combine the cheeses and spread mound into one half of the peppers, topping with the other half.  Wrap a slice of bacon around the stuffed pepper and place onto a baking sheet.  Bake in a preheated 400* oven for 15-18 minutes, until bacon is crisped and pepper is tender.  Print Page

BLT Bites.....Getting Ready for the Game over at #SundaySupper


Like it or not Fall is fast approaching.....I know that it is still hot outside.  I know that the leaves have not yet started to turn, let alone fall.  But....the kids are heading back to school.  And Football Season is upon us.

To celebrate the football season, Colleen of  The Redhead Baker has asked us to come up with som easy but delicious tailgate or party food.  Now I have to confess that I am not much of a football fan but I am a tailgate and party fan so I was happy to partake in this fun event.

I brought along these tasty little morsels of goodness that you can just pop in your mouth and enjoy a BLT without the toast.  They are easy to make and travel well, making them the perfect dish to bring with you to your next game day gathering.

BLT Bites

Quick little pop in your mouth appetizers. Perfect with a cocktail or glass of wine before dinner.
Prep time: 10 MinTotal time: 10 Min

Ingredients

  • 2 handfuls of greens, I used a spinach, chard and kale mixture 
  • 1 (8 oz) block of cream cheese 
  • 6-8 slices of bacon, cooked crisp and crumbled 
  • 1 pkg of cherry tomatoes

Instructions

  1. Place the greens, cream cheese and bacon into a blender or food processor and pulse until creamy and combined with some small chunks of bacon remaining. Cut each tomato in half and scoop out the seeds and membranes. Fill each half with the cream cheese mixture and garnish with additional bacon if desired
