This easy slow cooker recipe is great when feeding a crowd. Only 3 ingredients and a few minutes of hands on time results in tender, flavorful chicken that can be served with tortillas and toppings, a side of rice or used in a casserole.
I served it up at the Teen's birthday party as one of the entrees with warmed flour tortillas, cheese, sour cream and guacamole so people could roll their own burritos. There were 2 other entrees as well which meant that after feeding nearly 30 people there was still enough left to create a casserole for another dinner for 4.
We enjoyed that casserole in place of the Spaghetti that had been on last weeks menu. Today is the last day of theater camp for the Angel Face. She LOVED it and tomorrow all the students are putting on a play for family and friends to attend. We, of course, will all be there and then we are all going to Amy's house for lunch afterwards.
Sunday we are just planning on having a day of relaxation by the pool. Monday, July 4th, we have been invited to Roz's for a BBQ. I am bringing some Sweet Sausage Rolls, Marinated Asparagus and Zucchini Bruschetta. On Tuesday I am taking my friend, Sister MaryAnn to the hospital for some tests. Frank and I will be going out to dinner and perhaps to a movie when I get home.
On Friday, our friend Peter is joining us for dinner. We haven't seen him for a long time and are looking forward to catching up.

3 Ingredient Slow Cooker Salsa Chicken
This easy slow cooker recipe is great when feeding a crowd. Only 3 ingredients and a few minutes of hands on time results in tender, flavorful chicken that can be served with tortillas and toppings, a side of rice or used in a casserole.

Ingredients
- 5-6 lbs. Boneless, Skinless, Chicken Breasts
- 1 T. Taco Seasoning
- 4 c. Chunky Red Salsa of choice
Instructions
- Place chicken breasts in slow cooker. Season with the taco seasoning. Pour half of the salsa over the chicken. Cover and cook on low for 6-8 hrs.
- Remove chicken to a cutting board and, using 2 forks, shred the chicken.
- Toss with the remaining salsa and serve.
