These Bagel Bites, made with sourdough starter, make a wonderful grab-and-go breakfast. I served them with garlic and Herb cheese as a snack. They were a wonderful way to start a visit with friends.

These mini bagels have the same great flavor and texture as their full-size cousins. They are chewy on the outside and soft on the inside.
This recipe makes 16 miniature bagels. You could use the same recipe to make 8 large bagels. I topped mine with Everything Bagel Seasoning. Use your favorite topping or no topping at all if you prefer.
These were perfect with a schmear of garlic/herb Boursin cheese as an appetizer. The following morning I enjoyed them with a schmear of peanut butter.

Sourdough Bagel Bites
These Bagel Bites, made with sourdough starter, make a wonderful grab-and-go breakfast.

Ingredients
- 1/2 c. active sourdough starter
- 1 1/4 c. warm water (105-110*)
- 4 c. flour
- 1 1/2 t. salt
- 1 T. honey
- 1 T. olive oil
- 1 T. baking soda
- Everything Bagel Seasoning, if desired
Instructions
- Combine the starter, water, flour, salt, honey, and olive oil in the large bowl of a stand mixer fitted with the dough hook.
- Run on low until combined; increase speed to medium and knead for 8-10 minutes, until the dough is smooth and elastic.
- Knead by hand into a ball. Set seam-side down in a bowl treated with cooking spray. Cover with a warm, damp towel and let rise 8 hrs, or overnight, until doubled in size.
- Divide the dough into pieces, approximately 50 grams each. This should give you 16 pieces of dough. Roll each into a ball and then, using your thumb and forefinger, make a hole in the center of each. Set aside.
- Bring a large pot of water to a boil and add the baking soda. Cook the bagels in batches for about 30 seconds per side. Remove with a slotted spoon or spider and place on a baking sheet lined with parchment or a silicone mat. Sprinkle with Everything Bagel Seasoning while still wet.
- Bake in a preheated 450* oven for about 15 minutes, until golden brown. Allow to cool completely before serving.
