I love grilling season. There is nothing better than throwing dinner on the grill and sitting with your loved ones sipping wine or a cocktail on the deck while dinner takes care of itself. When making this delicious dish, I added some sweet potato planks so that the complete meal was prepared together.
When everything was cooked to perfection all that was left to do was to chop up the pineapple and onions to toss with some lime juice while the pork chops rested. Oh....and pour another Rum Punch to enjoy with this meal.
This is a perfect, easy meal to help you enjoy Memorial Day tomorrow or any summertime gathering. Whatever you do, whatever you serve, remember to add a thought for our fallen heroes during grace before dinner.

Grilled Pork Chops with Pineapple Salsa
Tender, juicy pork chops topped with a fresh pineapple salsa makes you feel like you are in the Tropics in your own back yard.
Prep time: 15 MCook time: 20 MTotal time: 35 M
Ingredients:
- 4 pork chops, I used bone in, loin chops
- 1/2 t. onion powder
- 1/2 t. paprika
- 1/2 t. cumin
- salt and pepper, to taste
- 1 small red onion, cut into 1/2 " slices
- 1 pineapple, peeled, cored and cut into 1/2" slices
- zest and juice of 1 lime
Instructions:
- Mix together the onion powder, paprika, cumin, salt and pepper. Rub onto both sides of the pork chops.
- Heat a grill to med high heat. Place the pork chops, onion slices and pineapple slices onto the grill and cook for 6-10 minutes per side. The onions and pineapple may be ready before the chops, just keep an eye on them and turn when they have nice grill marks and the onion is softened. The chops should be cooked until an internal temperature of 145" is reached.
- Remove from grill and allow chops to rest while you chop the pineapple and onions into chunks. Sprinkle with the lime zest and juice and toss to coat. Serve over the pork chops and pass additional salsa at the table.
