This is a simple, delicious salad. A perfect side dish for the cold winter months when fresh produce is not at it's peak. On the off-chance there are leftovers you can add a can of tuna and enjoy it for lunch the following day.

White Bean and Basil Salad
Ingredients
- 1 (15 oz) can white beans, drained and rinsed
- 1/2 c. olive oil
- Leaves from 1 bunch basil, chopped
- salt and pepper, to taste
Instructions
- Combine all ingredients in a large bowl. Transfer to a serving dish. Serve immediately or refrigerate for up to 24 hours. Bring to room temperature before serving.

It's amazing how good and hearty beans taste and how easy they are to make. This simple bean salad looks delicious and throwing in tuna sounds like a good addition.
