B is for Beans with a Bonus Book Review

This is a simple, delicious salad. A perfect side dish for the cold winter months when fresh produce is not at it's peak.  On the off-chance there are leftovers you can add a can of tuna and enjoy it for lunch the following day.

Bouncing into the New Year, I Become aware of how very Blessed I am. Busy Blogging, Building Muscle, Becoming more fit, Breaking Bread with friends and family, attending Broadway in Detroit, enjoying Bands in concert, and filling the Bags for our upcoming trip to Balmy, Beautiful Maui.

As you can see I am full of B(S?) this morning.  That's Because we are celebrating the letter B for our alphabet challenge today.   Let's see what Bold, Bright, Basic Bounty is being shared today......


White Bean Salad

This salad has been a staple in my household since the early 2000's when I got a cookbook titled At Home With Friends by Michele Adams and Gia Russo.  It is a well written cookbook broken down into chapters for Breakfasts, Outdoor Entertaining, Dinner Parties, Buffets, and Cocktails and Hors D'ouvres.

Each chapter then has several categories.  This recipe was found in Dinner Parties in a meal titled Simple Family Dinner.  The beginning of each category then has a page "On The Menu" that has a subsection ffor Plan Ahead Party and "Serving it Up" that has a subsection for an Instant Party, giving shortcuts.  Each individual recipe then includes ideas for shortcuts.

This salad contains only 3 Ingredients and takes less than 5 minutes to put together.  I serve it as a side but it is so good that I have been known to enjoy it for lunch on it's own.

White Bean and Basil Salad

This is a simple, delicious salad. A perfect side dish for the cold winter months when fresh produce is not at it's peak. On the off-chance there are leftovers you can add a can of tuna and enjoy it for lunch the following day.

Ingredients

  • 1 (15 oz) can white beans, drained and rinsed
  • 1/2 c. olive oil
  • Leaves from 1 bunch basil, chopped
  • salt and pepper, to taste

Instructions

  1. Combine all ingredients in a large bowl. Transfer to a serving dish. Serve immediately or refrigerate for up to 24 hours. Bring to room temperature before serving.

  1. It's amazing how good and hearty beans taste and how easy they are to make. This simple bean salad looks delicious and throwing in tuna sounds like a good addition.
