Pizza Beans #SundayFunday

This is a wonderful Meatless Monday meal with tons of protein from the beans and cheese, with all the pizza flavors you love.

Camilla of Culinary Cam is hosting this week and, informing us that tomorrow is Lima Bean Respect Day, invited us to share a recipe featuring these beans.  What's that you say?  Your family doesn't like Lima Beans?  No Problem.  These recipes are made with Butter Beans, Gigante Beans, Madagascar Beans, or Chad Beans.  A Bean by any other name still tastes as delicious.......

Pizza Beans

I started with sauteeing some onions and garlic.  Then I added some canned beans, oregano, spinach, and marinara.  Topped it with some shredded cheese and popped it in the oven.

I served it as a main course, with a side of garlic bread.  OH MY YUM!!  This recipe made enough for 3 of us to enjoy for dinner and 2 of us to enjoy for lunch the following day.

I used Butter Beans (aka Lima Beans)  in this recipe, but any white beans will give similar results.  Enjoy.....

Pizza Beans

This is a wonderful Meatless Monday meal with tons of protein from the beans and cheese, with all the pizza flavors you love.

Ingredients

  • 1 Vidalia onion, diced
  • 3 cloves garlic, minced
  • 2 (15 oz) cans Butter Beans, drained but not rinsed
  • 1 T. olive oil
  • salt and pepper, to taste
  • 1/2 t. dried oregano
  • 3-4 handfuls of baby spinach
  • 2 1/2 c. Marinara Sauce
  • 2 c. shredded Mozzarella Cheese

Instructions

  1. Heat the olive oil in a cast-iron or oven-safe skillet over medium heat. Add the onions, season with salt and pepper, and cook until fragrant and translucent.
  2. Stir in the garlic and oregano, cook for about 30 seconds, then add the beans.
  3. Add the spinach, in batches by handfuls, stirring until wilted. Stir in the marinara sauce and cook for about 5 minutes, until heated through and bubbling.
  4. Remove from heat, sprinkle the cheese over the beans, and place under a broiler until the cheese is melted and browned in spots, about another 5 minutes.
