This dish is traditional comfort food in the UK. I have read about it many times, but have never tried it. I must say, it's pretty tasty and yes, comforting. A great way to use up leftover baked beans if you have them. If not, open up and heat some canned beans to serve over the toast.
I was inspired to make this dish while listening to the novel Jenny James is Not a Disaster.......
I enjoyed the audio version of this novel, which begins with Jesny learning that the office where she works is closing and that if she wants to keep her job, she must move from her little cottage on a cliff overlooking the sea. When she returns to her little cottage, she comforts herself with Beans on Toast.
Jenny is a single mom whose son is getting ready to fly the nest to start University. She has been single since he was born with no monetary or physical support from her son's father, who travels around the world, keeping in touch with his son through Facetime phone calls.
She also has no family support having broken ties with her parents when they objected to her relationship with her son, Charlie's father. While still struggling with the decision about her employment, Jenny comes home one day to find that her cottage has slid off of the cliff and into the sea.
Thus starts this novel about forgiving yourself, forgiving others, finding your joy, and starting anew. Jenny and Charlie hook up with Luke and his dog, Betty, and join them on their journey across the area in a motorhome, where they enjoy new experiences and heal old wounds.
I finished listening to this novel as we were heading to our first outing with our new travel trailer. It was fun, especially when Jenny started blogging about her adventures. Toward the end of the novel, Jenny has reconciled with her parents and has offered to make them dinner. They decline, saying they can only eat baked beans on toast so many times.
This cinched the recipe I am sharing today. I had some leftover beans from a BBQ that we had, so I reheated them and served them on a slice of buttered toast. It's surprisingly good.

Today is our youngest daughter, Marissa's 21st birthday. We are taking her out for lunch, and then her boyfriend is taking her to the Tiger's game to celebrate.
Tomorrow we have a gathering to celebrate Marissa and Raechel, whose birthday is July 5th. Sunday we are going to a family gathering for Frank's sister's birthday and then to a housewarming for our daughter, Jessica, and her husband, Julien, who recently purchased a new home.
