One Dish Meals
We returned home from a road trip, emptied out the RV, threw in some laundry, and hopped in the pool. It was HOT!! We relaxed in the pool for a while, and I decided I better get dinner on before it got too late. Luckily, this one-pot meal only takes 30 minutes.
I didn't take a photo of the fully cooked meal in a pot, and almost forgot to take a picture of the completed stew when it was served. Luckily, the Angel Face was here to remind me.

White Bean and Kielbasa Stew
Ready in under half an hour, this stew is hearty, delicious, and best of all, it only uses one pot.

Ingredients
- 1/2 T. olive oil
- 6 oz. smoked kielbasa, sliced into rounds
- 3 cloves garlic, minced
- 1/3 c. dry white wine
- 3 c. chicken broth
- 3 oz. small pasta
- 1 can (15 oz) white beans, drained and rinsed
- freshly ground pepper
- 2 handfuls of baby spinach
- 1 handful of shredded parmesan cheese
Instructions
- Heat oil in a skillet over medium heat. Add the kielbasa and cook until browned, about 4 minutes. Transfer to a plate and set aside.
- Add the garlic to the pan and cook for about 30 seconds, before adding the wine. Cook and stir, scraping up any browned bits until wine is reduced by half.
- Add the broth and the pasta cook for about 8 minutes.
- Add the reserved kielbasa, and the beans. Season with pepper, stir in the spinach, and cook for 2 or 3 minutes, until pasta is tender and sauce is thickened.
- Stir in the cheese and serve with crusty bread to soak up the juices.
