Crispy Roasted Potatoes because This Is Not About Us #LitHappens

This Is Not About Us was chosen by Debra of Eliot's Eats as our April Lit Happens selection.  Lit Happens is an online book club where each month one of the members chooses a book and posts discussion questions on our Facebook Page.  We read the book at our leisure and answer the questions when we finish.  It is a fun, no-stress book club to belong to.

Butter Roasted Tomato Sauce, The Weekly Menu and a Book Review

This pasta sauce is ready in less than an hour, but it tastes as though it has simmered all day long.  This sauce can be prepared and kept in the refrigerator for up to 4 days.  Simply rewarm it and toss in a little of the pasta cooking water to loosen it for coating the pasta.

Slow Cooker Mushroom Soup with a Jura Trosseau #SoupSaturdaySwappers #FrenchWinophiles

This soup is not only comforting and delicious but it is mostly hands off.  Place three different types of mushrooms into a slow cooker with some onions and spices and walk away for 4-5 hours.  When you are ready to eat all it needs is a quick puree and a little bit of cream.

This delicious, tender, flavorful chicken Shwarma only takes 45 minutes in the oven before you are enjoying it for dinner.

Apple Cider Brined Chicken #CooktheBooks

This chicken spends the night in an apple cider brine and then is brushed with an apple cider glaze during the final stages of roasting.  It is juicy, tender and delicious but most importantly of all it is easy peasy!!

Apple Tea Brined Chicken #AppleWeek

This post is sponsored in conjunction with #AppleWeek . I received complimentary product from sponsor companies to aid in the creation of the #AppleWeek recipes. All opinions are mine alone.

Brined in Apple Tea and then roasted on a covered grill creates a chicken that is a beautiful golden brown, deliciously tender and juicy, and extraordinarily delicious.  It is worth waiting for as you brine the chicken overnight.

Today is Day 4 of this exciting event we call Apple Week...........
