Almond Poppyseed Bread #BreadBakers

This month's Bread Bakers is being hosted by Mayuri of Mayuri's Jikoni.  Mayuri asked us to make a bread containing seeds.  She then shared that botanically seeds include cereals, legumes, nuts, cocoa beans and coffee beans.  Who knew?  Mayuri....that's who.


I decided to share a quick bread that contained Poppy Seeds.  It also contains almond extract so I guess that means it double qualifies if nuts are considered seeds.

I like this recipe because it only makes one loaf.  I know, I know....quick bread freezes beautifully so it shouldn't matter if I make more than one loaf.  That is assuming that I have any will power, which I don't.  It is safer for me just to make one loaf of something this delicious.  Then I am not tempted to keep eating until there is nothing left but the crumbs.

This bread certainly didn't last long.  I served it up with coffee on the first day that the carpenter came to work on our remodel.  He had 2 pieces with his coffee in the morning and then another piece after lunch. I think he liked it.

Almond Poppyseed Bread

This quick and easy sweet bread has a tender crumb and an amazing flavor profile. It is perfect with your morning cup of coffee or as a dessert after lunch or dinner.
prep time: 15 MINScook time: 1 hourtotal time: 1 hours and 15 mins

ingredients:

1 c. + 2 T. sugar
1/2 c. vegetable oil
2 eggs
1 1/2 T. poppy seeds
1 t. lemon juice
1 t. almond extract
1 t. vanilla
1 1/2 c. flour
3/4 t. baking powder
pinch of salt
3/4 c. milk

instructions

Place the sugar, oil, eggs, poppy seeds, lemon, almond extract and vanilla into the large bowl of stand mixer, fitted with the paddle attachment.  Beat until well blended.

Combine the flour, baking powder and salt.  With the mixer on low, alternately add the flour mixture and the milk to the sugar mixture, beating  just until completely moistened.

Pour into a 8x4" loaf pan that has been treated with baking spray.  

Bake in a preheated 350* oven for 50-60 minutes, until a skewer inserted removes cleanly.

Tent with aluminum foil if the bread starts to brown too much.

Lemon Poppyseed Muffins #BreadBakers

Julie of Hostess at Heart is hosting our Bread Bakers group this month, saying:
"April showers bring May flowers and Mother's Day.. Bake any bread that reminds you of flowers or Mothers Day."
My mind immediately went to seeds. I thought about making something with sunflower seeds but that feels more Fall like to me and we were concentrating on Spring. I thought about my PoppySeed Roll , but I have already shared that and that, to me, is a Winter bread and again we were thinking Spring Flowers here.



When I think of Spring, lemon always comes to mind.  I think it is because it is so bright and sunshiney feeling. When I think of lemons, I think of poppyseeds.  I love that flavor combination.  It is so perfect together.

You see how my mind works?  The struggle is real folks.....my mind works like this all day, every day.  But mostly it works this way at night when I lie there trying to turn my mind off to no avail.


So I decide to go with some Lemon Poppyseed Muffins that are perfect for a Mother's Day Brunch.  I combined the wet ingredients into the dry ingredients and then stirred in some Poppy seeds.


I baked them up and served them along with a Spring Vegetable Quiche that I am sharing in our #BrunchWeek event on Friday.  I made these slightly healthier by using half whole wheat flour and butter flavored coconut oil instead of butter.  I hope that you enjoy them as much as we did.


You will find more wonderful Flower and Mother's Day inspired Muffins following my recipe.  My husband and I both lost our Moms slightly over a year ago.  This is our second Mother's Day without them and it hurts as badly as the first without them did.  If you are lucky enough to still have your Mom take a moment out of your busy day and give her a call.  It will make her day and you will be making memories that will last you a lifetime.

Lemon Poppyseed Muffins

1 1/4 all purpose flour
1 1/4 white whole wheat flour
1 3/4 t. baking powder
1/4 t. baking soda
large pinch kosher salt
1 c. sugar
2 eggs, room temperature
zest and juice of  1 lemon
1/3 c. milk (I used 2%)
1/2 c.  butter flavored coconut oil, melted
1 T. poppyseeds

Combine flours, baking powder, baking soda and salt in a large bowl.

Whisk together the sugar, eggs, lemon zest and juice, milk and coconut oil.

Add the liquid mixture to the flour mixture, all at once, and stir until just blended.  Stir in the poppyseeds.  Divide the batter between the 12 cups of a muffin tin lined with paper cups.  Bake in a preheated 350* oven for 18-20 minutes, until a skewer inserted removes cleanly.  Let muffins cool in pans on a rack for 10 minutes before removing to rack to cool completely.  Print Recipe

Christmas Around the World. Anginetti (Italian LemonDrops) #ChristmasCookies #FilltheCookieJar

It is also time for my monthly installment for Fill the Cookie Jar.  A fun group hosted by Cynthia of Feeding Big.  We post each month and it worked out very nicely that this month's event coincided with the 12 Days of Christmas Cookies event.  You will find links to all the cookies in both events following this post.



I decided that I am going to travel the world during this 12 Days of Christmas Cookies event, starting with today's offering Anginetti.  Anginetti is a traditional Lemon Drop Cookie from Italy that is served during the Christmas Season.


These tender, bright morsels are actually like a bite of Spring to me.  I was surprised that lemon was the traditional flavor for these cookies.  Happily surprised, that is.  These are absolutely amazing, light and not overly sweet. The photos found on Food.com where I found this recipe actually showed the cookies served up for many occasions with sprinkles to match the season.  I decided to sprinkle mine with poppy seeds because I love the lemon/poppy seed combination.

Other than the poppy seeds I made these cookies just as written and am very glad I did as the recipe is perfect.....easy peasy and delicious.

Anginetti (Italian Lemon Drop Cookies)
slightly adapted from Kim D at Food.com

1/2 c.. sugar
1/4 c. vegetable shortening
3 eggs
1 1/2 t. lemon extract
2 c. flour
1 1/2 t. baking powder
dash of salt
3 c. powdered sugar
1/4 c. water
1 t. lemon extract
Poppy Seeds for garnish

Cream together sugar and shortening until light and fluffy.  Add eggs, one at a time, beating well after each.  Mix in 1 1/2 t. lemon extract.  Add the flour, baking powder and salt.  Mix on low speed until flour is combined then mix well.  Using a small cookie scoop, drop the dough onto parchment lined baking sheet, leaving about 2" between cookies.  Bake in a preheated 350* oven for 12-15 minutes or until firm and lightly browned. Cool completely on wire racks.

Combine the powdered sugar, water and 1 t. lemon extract in a small bowl.  Spread onto each cookie, sprinkling immediately with the poppy seeds.  Print Recipe
