I am hosting Bundt Bakers this month and when I discovered that today is National Muffin Day it made my theme choice very easy.

I have this nifty little bundt cake muffin pan that I used for today's recipe. I use it quite often when making bundts because I like the automatic portion control and it makes sharing my baked goods with others much easier. This pan is also great to use when baking for a bake sale where people seem to prefer hand held goodies over a whole cake.
You can see I treated this pan very liberally with baking spray. That is my best advice to you when making any kind of bundt. That baking spray is able to cover areas much easier than when you try to butter and flour the pan yourself.
The muffins slip out beautifully. I think you will be happy with this recipe whether you make it in a full size bundt, muffin bundt or a regular muffin tin. They are light, airy and flavorful. Perfect for an on the go breakfast, lunchbox snack or after school treat. Enjoy....

Orange Poppy Seed Muffin Bundts
These wonderful little Bundt Muffins are flavored with orange zest and juice and then given a wonderful crunch with the poppy seeds.
prep time: 10 Mcook time: 18 Mtotal time: 28 M
ingredients:
- 1 1/3 c. flour
- 1 c. sugar
- 1 T. poppy seeds
- 1/2 t. baking soda
- pinch of salt
- 1 egg
- 1/2 c. sour cream
- 1/3 c. butter, melted
- zest and juice of 2 mandarin oranges (clementines)
instructions:
How to cook Orange Poppy Seed Muffin Bundts
- In large bowl combine flour, sugar, poppy seed, baking soda and salt. Make a well in the center and set aside.
- In small bowl or 2 cup measuring cup whisk together the egg, sour cream, butter, juice and zest. Pour into the well made in dry ingredients and stir just until combined.
- Spoon into muffin tins 2/3 full and bake in a preheated 375* oven for 15-18 minutes until a skewer inserted removes cleanly.
- Cool in pan for a few minutes before turning out onto a rack to cool completely.

This little Bundt pans are just the bomb. I can imagine all sorts of things to do with them besides just Bundt minis and muffins. Great idea for a theme!

DeleteI'm also a fan of the mini bundt pans and don't use it as much as I'd like to. Orange flavored cakes always grab my attention and after reading this post I'm thinking more springlike thoughts. Thanks for sharing this tasty recipe.
