Ok, you caught me.....I lied. This Ice Cream is supposed to be only 2 ingredients, but I had to add a little milk to get the consistency I wanted. So I guess this is actually 3-ingredient ice cream, unless your bananas are a little riper and creamier than mine.
I had some leftover Buttermilk in the refrigerator and some overripe bananas on the counter, so I did what I always do when I need to use up ingredients: I made muffins.
Named after a specialty drink from a nearby restaurant, these delicious muffins are chock-full of banana, chocolate, and coconut. As an added bonus, I also used up some of the zucchini that is taking up space on my counter.
