Another great thing about these muffins is that they are even better the following day, like all baked goods containing bananas Feel free to add nuts. I love nuts with bananas but my husband is not a fan so I left them out.

Banana Oatmeal Muffins
These quick and easy muffins are a great way to use up those over-ripe bananas that are sitting on your counter.

Ingredients
- 1 1/2 c. flour
- 1 c. rolled oats
- 1/2 c. sugar
- 2 t. baking powder
- 1 t. baking soda
- pinch of salt
- 1 egg
- 3/4 c. milk
- 1/3 c. canola oil
- 1 t. vanilla
- 2 very ripe bananas, mashed
Instructions
- Whisk together the flour, oats, sugar, baking powder, baking soda, and salt in a large bowl. Make a well in the center and set aside.
- Whisk together the egg, milk, oil, vanilla, and bananas. Pour into the well and mix with a wooden spoon just until combined.
- Divide the batter into 12 muffin cups that have been treated with baking spray.
- Bake in a preheated 400* oven for 20 minutes, until golden brown and a skewer inserted into the center, removes cleanly.

I used to make banana nut muffins when I had kitchen duty in our co-op in college. These look beautiful, such a gorgeous color, and I really like the addition of the oats!
