It's time for Muffin Monday with a Bonus Book Review......
I was inspired to make these muffins while reading My Friends by Fredrik Backman. They turned out so well that I decided to share them with my friends here at Muffin Monday.

When I learned that Fredrik Backman had a new novel out last month, I immediately put my name on the list to borrow it from my local library. This novel, like all of Backman's novels, is a quick read. I think this is because they are so hard to put down.
My Friends follows Louisa, who has just aged out of Foster care. She has in her possession a postcard of a painting that has carried her through all the trauma of her existence. The painting is on display at an auction being held at a church. Louisa, who is reeling from the death of her one and only friend, decides to break into the auction so that she can see this painting in person.
When she is discovered and making her escape, she runs smack dab into the artist, who is dying. The artist recognizes Louisa as a kindred spirit and asks his one and only friend, Ted, to find Louisa and bequeath the painting to her.
Thus begins the relationship between Louisa and Ted, both mourning the person whom they loved most in their lives. The artist, however, was not Ted's only friend, but the only friend who was left from his childhoood. Ted begins sharing the story of the figures in the painting.
Like all of Backman's novels, The Friends made me laugh out loud and sob uncontrollably, sometimes in the same paragraph. I always fall in love with Backman's characters, and this novel was no exception. His characters are very human. They possess many good qualities, but they also make plenty of mistakes, and they strive to survive in the best way they know how.
Ted and his teenage friends all came from dysfunctional families. Ted's family was not always dysfunctional, but became so as his father was dying from cancer, causing his mother to have to work nights and to care for a sick husband during the day, with little to no time for her son.
Unless Ted and his friends were heating up dinners that were made by his mom and frozen, the teenagers subsisted mostly on junk food. Muffins were mentioned numerous times.
I decided that I would make some "healthier" muffins so that the friends could at least get a little nutrition in their diets.

ABC Muffins
A is for Avocado. B is for Banana. C is for Chocolate Chips. D is for Delightfully Delicious.

Ingredients
- 1 over-ripe banana
- 1 small, ripe avocado
- 2 eggs
- 2 T. honey
- 1 t. vanilla
- 1 1/2 c. flour
- 2 t. baking powder
- pinch of salt
- 1/3 c. dark chocolate chips
Instructions
- Place the banana, avocado, eggs, honey, and vanilla into the bowl of a food processor and puree until smooth.
- Sift the flour, baking powder, and salt into a bowl. Make a well in the center and pour the banana mixture into the well.
- Stir just until combined then fold in the chocolate chips.
- Divide the batter between 6 muffin cups that have been treated with baking spray and bake in a preheated 350* for 15-20 minutes, until a skewer inserted in the center removes cleanly.

I love, love, love Fredrik Backman and I thoroughly enjoyed his latest book too. I thought your muffins were going to be apple, banana and carrot so the avocado and chocolate chips are a lovely surprise!
ReplyDeleteYou may actually ay have encouraged me to read a book! I’ve been so bad about it ever since I want to grad school late in life! I burned out lol. The muffins look great and they are so fluffy.
ReplyDeleteHehe, I read your first sentence and had the "they're magically delicious ♪♫" jingle going through my head. I love sneaking avocado into things like pie and muffins! Goodness, I went and looked at the library and there were 1323 holds on 174 copies of the ebook, and similar for the other versions. Then I remembered I haven't been using my Everand lately and they have the audiobook!
