I wasn't sure that I was going to be able to join in the fun. Last week my life got crazy again. The Lenten Season is always busy for me as I run the Fish Fry Fundraiser for our Parish. This requires a lot of time and energy. I do a LOT of cooking while preparing to serve 300+ meals each Friday....but very little cooking at home on Wednesdays, Thursdays or Fridays during Lent. Wednesdays are usually leftovers, Thursdays are usually carryout and Fridays we eat at the Fish Fry.
Add to this that our Brother in Law passed away this past Friday so that Sunday, Monday and Tuesday were spent at the funeral home, church and burial. I didn't think there was anyway that I would get a recipe made and a post written in time for today's event.
However, Monday morning, we had a Doc appointment for Frank. Great news.....He is healing wonderfully, no restrictions, see you in 6 months!!! On the way home I stopped by the grocer to pick up bottled waters to have for guests at the funeral home when visitation started at 3 pm. While I was in the grocers, I picked up a rotisserie chicken and some tortilla chips.
When we got home it was simply a matter of shredding some of the chicken, opening a couple of cans and throwing the sheet pan under the broiler. We were able to have lunch and then I quickly wrote up this post while Frank showered before we had to leave.
All of this to say; that this is a quick, easy and delicious meal in a flash made with items normally in my pantry and refrigerator. I was planning on having a roast chicken on Sunday and using the leftovers for this meal however the store bought rotisserie chicken worked out perfectly and I still had enough chicken left to put together a casserole for tonight's dinner when I get home from the Wednesday Fish Fry prep. Woohooooo.

Chicken and Cheese Sheet Pan Nachos
Have leftover chicken in your refrigerator? These Sheet Pan Nachos are the perfect way to use it up and make a wonderful lunch, light dinner or snack.

Ingredients
- 2 c. shredded, cooked chicken
- 1/2 lg. bag tortilla chips
- 1 (15 oz) can three bean mixture, rinsed and drained
- 1 (14 oz) can Rotel Tomatoes and green chiles, drained
- 1 1/2 c. shredded Mexican Blend Cheese
Instructions
- Spread the tortilla chips onto a baking sheet that has been covered with parchment or a silicone mat.
- Sprinkle the chicken, beans, and tomatoes evenly over the top of the tortilla chips. Cover all with the shredded cheese.
- Place under the broiler until heated through and the cheese is melted and starting to brown a bit.
- Serve with sour cream and salsa if desired.
Well, with Brenna, I pretty much always have chicken in my fridge...although, if I were to steal it from her, there might be a lot of meowing and complaining! Still, perhaps I'll have to let her just deal one night if it means eating these nachos!!!
