This dish is one I found on line. It called for olives but my husband is not an olive lover so I omitted them. I would also tone down the lemon a little bit next time I make it, perhaps a smaller lemon or the juice of half a larger lemon. I was unable to find whole wheat orzo so I just went with the regular kind.
- 1 lb. boneless, skinless chicken breast, cut into 4 pieces
- 1 c. chicken broth (low sodium)
- 3 Campari tomatoes, seeded and diced
- 1/2 Vidalia onion, chopped
- zest and juice of 1 small lemon
- 1 t. Herbes de Provence
- salt and pepper, to taste
- 3/4 c. orzo (whole wheat if available)
- Place the chicken, broth, tomatoes, onion, lemon zest, lemon juice, herbs, salt and pepper in the crock of a slow cooker. Cook on high for 2 hrs. or low for 4 hrs.
- Stir in orzo and cook on high for another 30 minutes.
Yield: 4 servings
