My loyal readers know that our third daughter, fifth child is from China. That means our Little Angel Face is half Chinese. We have celebrated Chinese New Year since Jessica came to live with us when she was 15. That's been 14 years ago now....time sure does fly. This is the menu that I will be serving up this February 12 when we have family dinner.
You may notice that these egg rolls are not on here. That is because Jessica's guy, Julien, is a vegetarian so I try to have as many options available for him as possible. The recipe I am sharing today is easily made vegetarian, simply omit the chicken. Or, if you prefer seafood, try these Shrimp Eggrolls.
We have Asian food around here a lot. These Chicken Egg Rolls were served up at a Christmas gathering that started with Asian Appetizers and Sake Wine. You can read about that gathering here where you will also find the Crab Rangoon recipe.
This is the year of the Ox. Our eldest daughter and first child was born in 1973. This is her year to shine. Jessica tells us that during your year you should wear red underwear for luck so if you were born in 1973 or any 12 year increment thereof, run out and buy yourself some panties or briefs. We all could use a little luck in this crazy world.

Easy Chicken Egg Rolls
These egg rolls using leftover chicken and packaged cole slaw mix couldn't be easier or faster. They are the perfect start to your Chinese New Year Celebration.

Ingredients
- 1 cup shredded cooked chicken
- 1 bunch scallions, white and light green parts, thinly sliced
- 1 clove garlic, minced
- 2 c. packaged cole slaw mix
- 3-4 sliced water chestnuts, small dice, save remaining for another dish
- 1/4 c. ginger sesame marinade
- 1/4 c. tamari
- 6 egg roll wrappers
- peanut oil for frying
Instructions
- Combine the chicken, scallions, garlic, cole slaw, water chestnuts, marinade and tamari in a bowl.
- Lay out 6 egg roll wrappers and divide the feeling between them, placing into the center of the wrapper. Fold each like an envelope around the filling, using a little water on the seams to seal shut.
- Heat about 2" of oil in a large skillet. Fry the egg rolls until a deep golden brown. Drain on a paper towel lined plate.

Several years ago, I took an egg roll making class with my mom at her church. So fun...and so yummy! Homemade egg rolls are the best!

DeleteI love egg rolls. The best part is they freeze so well. You can make up several kinds then freeze. Then pop them in the Breville so vegetarians get their kind and you can have whichever. For me, I like being able to have things from the freezer rather than nuking cold leftovers with just the two of us.
