Tortellini Pesto Primavera

I have the perfect Meatless Monday Meal for you today or the perfect side dish to serve along with your grilled meat on this 4th Day of July......Happy Independence Day to all my readers from the USA.

I actually served this dish last week but thought it was perfect to share with you today.  This dish can be served warm or at room temperature.  It is a perfect dish to bring to a potluck because it doesn't need to be refrigerated.  



It only takes minutes to put together and you can be on your way out the door to whatever celebration you are attending.  This is also a great meal that comes together quickly on a busy weeknights. Enjoy.

Tortellini Pesto Primavera

1 (9 oz) pkg. 3 cheese tortellini
1 T. pesto, store bought or homemade
1 large tomato, seeded and diced
1 bunch asparagus, woody ends removed, cut into thirds
Parmesan Cheese 

Bring a large pot of salted water to a boil and prepare tortellini per package directions, adding the asparagus during the last 3 minutes of cooking.  Place the tomato and pesto in a large bowl. Drain the pasta and asparagus and add to the bowl while still warm tossing to cover with the pesto.  Garnish with Parmesan Cheese.  Print Recipe
