Waffle Battered Fried Chicken #MoviesandMunchies

We went to visit our son, Chuck, earlier this month.  Chuck lives in Virginia and the first night that we were there we decided to watch a movie.  I requested that we watch Hidden Figures as I had chosen it for our Movies and Munchies film this month.   

I told him that I was going to make a recipe inspired by the movie and he said "Just make Fried Chicken, it's a movie about black women in Virginia".  Sure enough, the very first food scene was a gathering at a church picnic and the first food on the table was Fried Chicken.

J Baldwin's Calamari #FishFridayFoodies

There is a restaurant here in Michigan owned by Chef Jeff Baldwin.  All of their food is wonderful but we ALWAYS order the calamari because it is the best we have ever eaten.  When Baldwin's first opened in 2004 he offered cooking classes and shared the recipe with us.  I am happy to share it with you today

Most of the time I try to feed my family healthy food.  I try to stay away from fatty, processed foods.  I air fry instead of deep fry.  I serve up lots of fresh fruits and veggies.  I shop locally and organically when possible.  But every once in a while, I get a hankering for some good old greasy, buttermilk coated, deep fried chicken.
