Z is for Zucchini

Here it is, the end of the year and the end of the 2024 Alphabet Challenge.  We have had a blast working our way through the alphabet every other week, finding and sharing recipes that either start with the assigned letter or contain a main ingredient that starts with the letter.

This week's letter is Z.  Let's see what everyone has brought to the table......

Last Alphabet Challenge I shared a recipe for Tzatziki because Y is for Yogurt.  That is the perfect dipping sauce for these fritters.

These would be great to make in the height of Zucchini season.  You can use the pulp from the zucchini when making stuffed zucchini for dinner.  You will need the pulp from about 3 lbs. of zucchini for this recipe.

Kolokithopites

Kolokithopites are delicious Zucchini Fritters that make a great appetizer, side dish, or light vegetarian main course.

Ingredients

  • 2 small zucchini
  • 1/2 t. salt
  • 1/2 c. + 1 T. flour
  • 2 eggs
  • salt and pepper, to taste
  • 1/4 c. mint leaves, finely chopped
  • 6 oz. crumbled feta cheese
  • Canola Oil

Instructions

  1. Cut the zucchini into chunks and place into a food processor. Pulse several times until finely chopped.
  2. Place into a colander set over a bowl and toss with 1/2 teaspoon of salt. Place a plate on top of the zucchini and place a weight ( a large can of tomatoes works) on top of the plate. Allow to drain for 10 minutes and then squeeze as much moisture as you can from the zucchini.
  3. Whisk together the flour, eggs, salt, pepper, and mint in a large bowl. Fold in the zucchini and feta. You should have a thick batter.
  4. Deep fry the fritters in heaping Tablespoons for 3-5 minutes, in batches, until golden brown. Drain on a paper towel before placing onto a platter and serving with Tzatziki
