We celebrated National Sneak Zucchini Onto Your Neighbor's Porch Day earlier this week. I was, in fact, gifted Zucchini from my neighbor. If you aren't that lucky, pick some up next time you are at your local Farmers Market because you are going to want to make this delicious Grilled Zucchini Carbonara.....

Sliced zucchini grilled until tender, tossed with pasta in a classic carbonara sauce. I did not add any pork to my carbonara as I was serving this on a Meatless Monday, but some crisped pancetta would have been a wonderful addition.

Yield: 4 servings

Grilled Zucchini Carbonara
Sliced zucchini grilled until tender, tossed with pasta in a classic carbonara sauce.
Prep time: 15 MinCook time: 15 MinTotal time: 30 Min
Ingredients
- 2 zucchini, cut into 1/4 inch rounds or half moons
- 2 T. olive oil
- salt and pepper, to taste
- 12 oz. fettuccine
- 6 egg yolks
- 1 egg
- 3 oz. shaved parmesan cheese
- large handful of basil leaves, chopped
- 1 T. butter
- 1 T. white miso paste
- 2 t. grated lemon zest
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package directions.
- While waiting for the water to boil, toss the zucchini with olive oil, salt, and pepper. Heat a grill to medium-high heat.
- After you put the pasta in the water, place the zucchini onto a vegetable grill pan and place it onto the grill. While the pasta boils, toss the zucchini occasionally, and cook until char marks appear and the zucchini is tender. Remove from heat and set aside.
- Whisk together the egg yolks, egg, cheese, butter, miso, basil, lemon zest, and a few grinds of pepper in a large bowl.
- When the pasta is cooked to the desired tenderness, drain it and add it to the egg yolk mixture along with the zucchini. Gently toss it in the egg mixture until glossy and coated.
- Divide between 4 bowls and serve with additional cheese if desired.
