Chocolate Pomegranate Crostini #ChocolateWeek

Crisp baguette slices topped with a honey sweetened cream cheese, sprinkled with pomegranate seeds, pistachios and grated dark chocolate.  

Chocolate Pomegranate Crostini

This is an elegant and beautiful appetizer to start off your Valentine's Day Celebration.  Welcome to Day 3 of Chocolate Week.

I served these up on New Years Eve.  Everyone was very impressed and they were a huge hit.  The flavors work so well with each other and no one realized just how easy they were to make up.

You can make them even easier if you find the pomegranate arils in the produce section of your grocer.  Mine was out so I had to seed my own pomegranate, not hard work but it takes a little more time.

Chocolate Pomegranate Crostini

Chocolate Pomegranate Crostini

Crisp baguette slices topped with a honey sweetened cream cheese, sprinkled with pomegranate seeds, pistachios and grated dark chocolate.

Ingredients

  • 24 (1/4") slices of French Baguette
  • 1 T. olive oil
  • 3 oz. cream cheese, room temperature
  • 1 1/2 T. orange juice
  • 1/2 T. honey
  • 3/4 c. pomegranate arils
  • 1/3 c. finely chopped pistachios
  • 2 oz. dark chocolate bar, grated

Instructions

  1. Place the baguette slices onto a baking sheet and brush with olive oil. Bake in a preheated 400* oven for 4-5 minutes, until lightly toasted. Remove from oven and let cool.
  2. Beat together the cream cheese, orange juice and honey. Spread onto each piece of toast and place onto a serving platter. Sprinkle with the pomegranate arils and pistachios. Grate the chocolate over all and serve.
