Kahlua and Cream Cake #BundtBakers

Baby, it's cold outside.....Here in Michigan we have been well below freezing for a couple of weeks.  The solution?  Cuddling up by the fire with a cocktail.  Too early for a cocktail?  Then cuddle up with this Kahlua and Cream Bundt Cake.  All the same flavors that you love in the cocktail.  Or do as I did and enjoy both while cuddling with your sweetie.

Kahlua Cake

This cake is simple to make starting with a packaged devil's food mix and doctoring it up to give it the flavors of your favorite liqueur.  Whip up some heavy cream for topping and enjoy a bite of Kahlua and Cream.

Kahlua and Cream Cake

Kahlua and Cream Cake

This is a delicious, chocolatey treat with cinnamon and citrus zest enhancing the chocolate from the mix, pudding and chocolate chips. It is just as delicious straight up but I prefer the addition of cream as I do with the cocktail.

Ingredients

  • 1 (16 oz) pkg. Devil's Food Cake mix
  • 1 (8 oz) container sour cream
  • 4 eggs
  • 1/2 c. Kahlua or other brand coffee flavored liqueur
  • 1/2 c. Canola oil
  • 1 (3.9 oz) pkg. Instant chocolate pudding
  • 2 T. orange zest
  • 1 t. cinnamon
  • 1 (12 oz) pkg. mini chocolate chips
  • 1 c. heavy cream
  • 1 T. powdered sugar + more for sprinkling

Instructions

  1. Combine the cake mix, sour cream, eggs, Kahlua, oil, pudding mix, zest and cinnamon in a large bowl. Beat on medium speed until smooth.
  2. Fold in the chocolate chips and pour into a bundt pan that has been treated with baking spray.
  3. Bake in a preheated 350* oven for 50-60 minutes, until a skewer inserted removes cleanly. Let cool in pan for 10 minutes before turning onto wire rack to cool completely.
  4. When cool, place onto a serving plate and sprinkle with powdered sugar.
  5. When ready to serve, whip the cream and 1 T. powdered sugar with an electric mixer starting on low speed and increasing the speed as it thickens until cream is light and fluffy.
  6. Serve the cake with a dollop of the whipped cream.
