Peppermint Patty Cookies #ChristmasCookies

Peppermint Patty Cookies

These cookies are so pretty and delicious nobody will realize how very easy they are to make.  In less than half an hour you have fresh cookies coming out of the oven.

The cookies crackle around the edges as they bake.  As they cool, the peppermint patty firms back up and adds a delicious little treat in each bite.

Peppermint Patty Cookies

Peppermint Patty Cookies

These delicious and easy Peppermint Patty Cookies start off with a box of chocolate cake mix and are topped with a Junior Mint before being baked.
Prep time: 10 MinCook time: 10 MinTotal time: 20 Min

Ingredients

  • 1 box chocolate cake mix
  • 1 t. baking powder
  • 2 eggs
  • 1/2 c. canola oil
  • 32 Junior Mints

Instructions

  1. Place the cake mix, baking powder, eggs and oil in the large bowl of a stand mixer.  Blend on low until combined.  Increase speed and mix until well blended.
  2. Using a small cookie scoop, roll the dough into a ball and place onto a baking sheet that has been covered with parchment or a silicone mat.  
  3. Press a junior mint down into the center of each cookie.  
  4. Bake in a preheated 350* oven for 8-10 minutes, until top crackles and cooked through.  Let cool slightly on baking sheet before moving them to a wire rack to cool completely.
