Cranberry Rice Pilaf #CranberryWeek

This Cranberry Rice Pilaf is full of Fall flavors and the perfect side dish for your Holiday table this year.

This dish was so wonderfully spiced and flavorful that it was almost like eating a dessert.  I didn't have any leftovers but if I had I would have turned them into a rice pudding.  In fact, I may serve this dish up again when it is just the 3 of us so that I can do just that!!

Cranberry Rice Pilaf

Cranberry Rice Pilaf

This Cranberry Rice Pilaf is full of Fall flavors and the perfect side dish for your Holiday table this year.

Ingredients

  • 1 T. olive oil
  • 1 cinnamon stick
  • 1 clove garlic, smashed
  • 2 c. Royal Blend Rice
  • 1 c. apple cider
  • 2 c. water
  • salt and pepper, to taste
  • 1/2 c. dried cranberries
  • 2 small apples, cored and chopped
  • 1 sweet onion, chopped
  • handful of chopped parsley 

Instructions

  1. Heat oil in a large pot over medium heat.  Add cinnamon stick and smashed garlic and cook until fragrant.  Add onions  and apple.  Cook for a few minutes until onion is translucent and apple is starting to soften.  Stir in rice, cider, water, dried cranberries, salt and pepper.  Bring to a boil.  Reduce heat to a simmer and cook until liquid is absorbed, 15-20 minutes.  Stir in most of the parsley saving some for sprinkling on top as garnish.

  2. I have GOT to get out and buy some cranberries! I usually make a wild rice-cranberry-orange dish for Thanksgiving. I might just make it for dinner tonight. Thanks!
