Tuesday Trivia

  • Did you know that according to Zumba Calculator, I burned 639 calories in my class today? That is if I were working at medium intensity.  It felt more like high intensity but I had to keep stopping for a few moments to catch my breath so I marked myself down.
  • Did you know that just eating one or two meatless meals each week cuts your cancer risk by 30%?  My original recipe for tonight contained chicken but since I had chicken yesterday on Meatless Monday, I adapted tonight's meal to be meat free.
  • Did you know that, according to Alz.org, in her 60's a woman's risk of developing alzheimer's is 1 in 6?  That scares the hell out of me!!  But I had a nice visit with Mom today, even if she doesn't remember.
  • Did you know that it is reported in ACA.org that chiropractic patients were found to be more satisfied with their back care providers after 4 weeks than were medical patients?  Some of you may note that this study was conducted by a chiropractic organization but I can tell you from personal experience that I have had great success in treating not only back pain but headaches, hip pain and TMJ by chiropractors.
  • Did you know that to lose 1 lb a week I need to eliminate 3500 calories using diet and exercize each week?  That means it will realistically take me 1 year to get to my target weight if I stay dedicated to my Quest for fitness.  I've done it before. I can do it again!!
Okay that's all the trivia I have for today.  As you can tell, I went to Zumba, to visit Mom and to the chiropractor today.  I am continuing on my Quest for Fitness by trying to incorporate more movement and better nutrition into my daily life.

Here is my adaptation of this recipe that I used for tonight's dinner.

Tortellini and  Vegetable Bake
adapted from BHG

3 c. refrigerated cheese tortellini
1 med. carrot, sliced into thin coins
1 c. sugar snap peas, cut in half
2 t. butter
4 oz. mushrooms
1/4 c. chicken broth
1 T. flour
1/2 t. dried oregano
dash of garlic powder
salt and pepper to taste
2/3 c. milk
4 oz. Neufchatel cheese, at room temperature, cubed
1/2 T. lemon juice
1/2 c. cherry tomatoes, halved
half of a green pepper, chopped
Parmesan cheese to sprinkle on top

Cook Tortellini in boiling salted water per package directions, adding the carrot for the last 5 minutes and the peas for the last 1 minute of cooking time.
Melt butter in a skillet and saute the mushrooms until softened.  Place chicken broth, flour and spices to a small jar and shake until smooth, add the milk to the jar and shake again.  Pour liquid into skillet with the mushrooms and cook, stirring, until thickened.  Add the cream cheese and stir until smooth. Remove from heat and stir in lemon juice, tomatoes and green pepper.  Add the Tortellini and vegetables to the sauce and toss to coat.  Turn into an 8x8 baking pan and sprinkle with parmesan cheese.  Bake in a preheated 350* oven for 30 minutes. 1. looks yummy! I do the same thing when I calculate my swim calories...I think I'm going all out, but that's probably just me...I'm sure the world would consider it moderate!

    1. Yes but then they there are some that use perceived exertion as a standard so I'm not sure....Let's just keep moving the best we can!

  2. You guys exhaust me just listening to you exercise :) As a RN I look at chiropractic with a skeptic eye, but I know that many find it beneficial. So whatever works...

    1. I always did too Paula. 35 years ago I suffered from migraines. A friend of mine had picked up our children from kindergarten and came in and found me suffering. He bundled me and the kids into the car and took me to his chiropractor. I walked out with no headache and none of the grogginess and exhaustion that normally followed on of my episodes. I was hooked!!
