Sweet and Spicy Roasted Cashews

When I was at Costco I bought a big package of cashews only to discover, once I got them home, that they were raw.  I have been using them in stir-fry like this Cashew Chicken, and Cashew Shrimp, and I have been throwing handfuls into my morning smoothies. 

We were having a birthday gathering for the girls, so I decided to season a batch with maple syrup and spices and roast them to put on the appetizer buffet.  So good!!

Last year, I celebrated the Letter N with Noodles with this Spring Pasta Primavera.

Sweet and Spicy Roasted Cashews

Sweet and Spicy Roasted Cashews

Raw cashews tossed with maple syrup and spices, then roasted to a golden brown. A delicious sweet/spicy treat.

Ingredients

  • 1 1/2 c. raw cashews
  • 2 T. Maple Syrup
  • 1/2 t. chili powder
  • dash of allspice
  • 1/4 t. cumin
  • dash of cayenne
  • large pinch of kosher salt

Instructions

  1. Whisk together the syrup, chili powder, allspice, cumin, cayenne, and salt in a bowl.
  2. Add the raw cashews and toss until coated. Spread onto a parchment-lined baking sheet and bake in a preheated 325* oven for about 17 minutes, until golden brown.
  3. Let cool completely on the parchment before separating and placing into a serving bowl.

  2. I usually make spiced nuts around the holidays. I don't know why I don't make them more often. These look perfect.
