My blogging friends and I get together every other Wednesday to share recipes that start or feature ingredients as we work our way through the alphabet.  Let's take a look at the other H recipes being shared today........

As with any stir-fry, you want to have all your ingredients ready before you begin cooking.  This recipe goes very quickly.  I had Frank fry the eggs as I made the beef.  If you are not lucky enough to have a sous chef, the stir-fry beef will be fine kept warm in the wok until ready to serve.

Lean Hamburger meat stir-fried with red peppers, carrots, jalapenos, and scallions in a savory, flavorful Thai-inspired sauce, served over steamed white rice and topped with a perfectly fried egg.

Ingredients

  • 1 lb. lean hamburger meat
  • 3 T. peanut oil
  • salt to taste
  • 1/4 c. oyster sauce
  • 1/4 c. soy sauce
  • 3 T. molasses
  • 2 T. fish sauce
  • 1 T. sugar
  • 1 red bell pepper, seeded and sliced
  • 1 carrot, cut into matchsticks
  • 1 jalapeno, sliced
  • 3 scallions, white and light green parts
  • 3 cloves garlic, peeled and sliced
  • 1 T. ginger paste
  • handful of basil leaves, roughly chopped
  • 4 eggs, fried sunny side up
  • 2 c. steamed rice

Instructions

  1. Whisk together the oyster sauce, soy sauce, molasses, fish sauce, sugar, and 1/4 cup of water until sugar is dissolved. Set aside.
  2. Heat 1 T. of oil in a wok over high heat. Add the beef, season lightly with salt, and cook until brown and crumbly. Remove to a plate and set aside.
  3. Reduce the heat to medium-high and add the remaining oil to the wok. Cook the peppers and carrots for a few minutes until they begin to soften. Add the jalapeno, garlic, scallions, and ginger. Cook and stir for a minute or two until fragrant.
  4. Add the reserved sauce to the wok and cook, stirring occasionally until it starts to thicken and turn glossy. Return the beef to the skillet along with the basil and toss to coat and warm through.
  5. Place 1/2 cup of rice into each of 4 bowls. Divide the beef among the bowls and top each with a fried egg. Serve immediately.

Cooking time does not include steaming the rice.
