Orange Skillet Cake #SummerDessertWeek

This Orange Skillet Cake is chock-full of flavor from the zest and puree of Navel Oranges.  It is a wonderful coffee cake served up as is, or an amazing dessert with the addition of whipped cream or, as I topped it, Orange Sherbet.

Orange Skillet Cake

This cake comes together quickly and is delicious just as it is with a cup of coffee in the morning, or dressed up with whipped cream, a scoop of ice cream, or orange sherbet for a wonderful dessert.

Orange Skillet Cake

This Orange Skillet Cake is chock-full of flavor from the zest and puree of Navel Oranges.

Ingredients

  • 2 c. sugar
  • 2 navel oranges
  • 2 t. vanilla
  • pinch of salt
  • 2 sticks butter, room temperature
  • 2 egg yolks, room temperature
  • 2 1/4 c. flour
  • 2 t. baking powder
  • olive oil

Instructions

  1. Place a cast iron pan in the oven and preheat to 350*.
  2. Cut the ends off the oranges, and then cut the unpeeled oranges into 8 sections each and place into the bowl of a food processor, and process until pureed. Set aside.
  3. Place the sugar and the zest of one of the oranges into the large bowl of a stand mixer. Rub the zest into the sugar with your fingers. Set aside.
  4. Add the butter to the sugar and beat with the paddle attachment until light and fluffy. Add the yolks, one at a time, beating well after each. Add the orange puree and mix until incorporated.
  5. Whisk together the flour, baking powder, and salt. Gradually mix into the batter on low speed until incorporated. Increase speed and beat until well mixed.
  6. Carefully remove the hot pan from the oven and brush with some olive oil. Add the batter to the pan and return it to the oven for 35-40 minutes, until a skewer inserted in the center removes cleanly.
