I is for Italian Ice

Italy's version of a sno-cone is made with real fruit instead of just flavoring the ice with colored syrup.  It is a delightful, healthy treat.

My blogging friends and I get together every other Wednesday to share recipes that start or feature ingredients as we work our way through the alphabet.  Let's take a look at the other I recipes being shared today........

This sweet treat only takes minutes to come together but then it needs to be put in the freezer for several hours to firm up enough that it turns slushy when you run a fork through it.

When I gave this to my husband, he said, "Oh, it's like a frozen Lindy".  I had never heard of a frozen Lindy.  He told me that as a child, his folks would take him to a drug store in Detroit where he would get a frozen treat in a dixie cup.  I was happy I could give him some fond food memories. He really enjoyed it, and then he called his sister and they reminisced about going for those treats.

Italian Ice

Italy's version of a sno-cone is made with real fruit instead of just flavoring the ice with colored syrup. It is a delightful, healthy treat.

Ingredients

  • 16 oz. strawberries, hulled
  • 2 T. sugar
  • 2 T. honey
  • 3 c. ice, divided

Instructions

  1. Place the strawberries, sugar, honey, and 2 cups of the ice into a heavy duty blender or food processor. Pulse until small chunks are formed.
  2. Add the remaining cup of ice and puree until smooth. Pour into a baking dish and place into the freezer for a couple of hours until firm enough to be scraped with a fork and become slushy. Time will depend on the thickness of the mixture in the pan you choose.
  3. Scoop into a paper cup and serve.

  6. I love that this can change with whatever's in season at the time. We've got strawberries coming up, blueberries in July, blackberries in August. This will be so fun to make with my niece!
