D is for Dates

This savory dish has a touch of sweetness from the dates tamed down by the tartness of vinegar.  It is not a beautiful dish but it is an amazingly delicious dish that is ready in less than an hour.

Some of us are working our way through the alphabet for 2025.  We get together and post recipes that contain an ingredient or start with the next letter of the alphabet every other Wednesday.  This week's letter is D.....

Chicken with Dates

This dish is an explosion of flavors.  The tender chicken breasts are seasoned with paprika and brown sugar, topped with a sweet and tart sauce made of dates and vinegar, flavored with shallots, and served with buttered egg noodles.  My girls thought it was the best chicken dish they had ever eaten.

 Last year I celebrated the Letter D with Dark Chocolate Mousse.

Chicken with Dates

This savory dish has a touch of sweetness from the dates tamed down by the tartness of vinegar. It is not a beautiful dish but it is an amazingly delicious dish that is ready in less than an hour.

Ingredients

  • 4 (6 oz) boneless, skinless chicken breasts
  • salt and pepper, to taste
  • 2 t. paprika
  • 1 t. brown sugar
  • 2 T. canola oil
  • 1/2 Vidalia Onion, sliced
  • 6 Medjool, pitted dates, chopped
  • 1/3 c. white wine vinegar
  • 3/4 c. chicken broth
  • 6 oz. egg noodles, cooked per package directions and tossed with 2 T. butter.

Instructions

  1. Combine the salt, pepper, paprika, and brown sugar. Sprinkle onto the chicken breasts.
  2. Heat the oil in a large, oven-safe skillet. Add the chicken and cook over medium heat until browned, flip, and place the pan into a preheated 425* oven for about 10 minutes, until an internal temperature of 165* is reached.
  3. Remove skillet from oven and return to stove-top. Remove the chicken to a platter and keep warm.
  4. Turn the heat under the skillet to med-high. Add the onion and cook, undisturbed, until browned. Stir and cook until tender, then add the dates and vinegar. Cook until vinegar is reduced.
  5. Add the chicken broth and bring to a boil. Reduce heat to a simmer. Slice the chicken and add to the skillet, along with any juices that collected on the plate.
  6. Serve with buttered noodles.
